Lucknow famous Dahi Phulki ~ Ramadan series ep-9 Cool down this summer with the refreshing taste of Lucknow’s iconic Dahi Phulki/ Dahi fulki – a perfect blend of crispy fritters soaked in creamy yogurt, seasoned with tangy spices it’s an ultimate way to beat the heat while enjoying a burst of flavors. (for detailed recipe go and watch it on my YouTube channel link in bio) Ingredients- 2 cup curd ▢ ½ tsp chilli flakes ▢ 2 tbsp sugar ▢ ½ tsp cumin powder ▢ ½ tsp kala namak ▢ ½ tsp salt ▢ ½ tsp garlic paste ▢ 1 cup water FOR BESAN PAKODA: ▢ 2 cup besan ▢ ¼ tsp turmeric ▢ ½ tsp chilli powder ▢ pinch hing ▢ ½ tsp salt ▢ water ▢ pinch baking soda ▢ 2 tbsp coriander, chopped ▢ oil, for frying Method- Firstly, in a large bowl take 2 cup curd, ½ tsp chilli flakes, 2 tbsp sugar, ½ tsp cumin powder, ½ tsp kala namak, ½ tsp salt, ½ tsp garlic paste. Mix well making sure everything is well combined. Add 1 cup water and prepare a flowing consistency curd mixture. keep aside. In a bowl take 2 cup besan, ¼ tsp turmeric, ½ tsp chilli powder, pinch hing and ½ tsp salt. Mix well making sure everything is well combined. Now add water and prepare a smooth consistency batter. Further, add pinch of baking soda, 2 tbsp coriander and mix well. Now wet your hand, and drop into the hot oil. Stir occasionally and fry on medium flame. Fry to golden brown and drain off. Transfer into the curd bowl and dip completely. Rest the pakoda mixture for 2 hours so that pakoda absorbs curd well. To serve, top with green chutney, tamarind chutney, cumin powder, chilli powder, sev and coriander. Fueled by @haveandaah because if the protein isn’t elite, the kitchen is closed for the season. 🚫 Ghee Podi Masala Eggs Ingredients • 4 Hard-boiled eggs (peeled and halved) • 1 Medium onion (thinly sliced) • 1.5 tbsp Ghee • ½ tsp Mustard seeds • 1 sprig Fresh curry leaves • 1.5 tbsp Podi masala • ½ tsp Red chili powder • Salt to taste • The Garnish: Fresh coriander and a squeeze of lemon The Method 1. Melt Ghee: Heat the ghee in a pan. Add mustard seeds and curry leaves until they sizzle and pop. 2. Sauté Onions: Add the sliced onions and sauté until translucent and slightly golden. 3. Spice Bloom: Stir in salt, chili powder, and podi masala. Let the spices cook in the ghee for 30 seconds 4. Add Eggs: Place the sliced eggs in the pan. Cook for 1 minute, tossing gently to ensure every piece is coated in the spicy ghee mixture. 5. Finish: Turn off the heat.
