Ingredients
For the cake
½ cup milk
1 tsp vinegar
6 tbsp sugar
¼ cup sunflower oil
½ cup all purpose flour
¼ cup cocoa powder
½ tsp baking powder
½ tsp baking soda
For the soak
¼ cup warm water
1 tbsp instant coffee powder
For the ganache
1 cup dark chocolate
1 cup cream
For the cornflakes layer
1 cup cornflakes
1 cup milk chocolate, melted
Instructions
1. Add milk and vinegar in a bowl and give it a quick mix. Let the mixture rest for 5 mins to curdle.
2. Add sugar and oil to the above mixture and whisk until nicely combined.
3. Sift in the all purpose flour, cocoa powder, baking powder and baking soda and mix only until no flour pockets remain.
4. Pour the batter in your oval glass dish and microwave for 3.5 minutes.
5. For the chocolate ganache, add chopped chocolate in a bowl and pour hot cream over it. Mix it well to make smooth chocolate ganache.
6. Once the cake is ready, soak it with espresso and pour chocolate ganache over it.
7. Mix cornflakes with melted milk chocolate and coat the cornflakes completely.
8. Spread an evenly layer of this mixture over the ganache and let the chocolate set before serving.

ingredients for 6 balls:
3/4 cup chocolate protein powder (180 ml / 90 g / 3 scoops)
3/4 cup almond flour (180 ml)
1/4 cup unsweetened cacao powder (60 ml)
1/4 cup maple syrup (60 ml)
1/4 cup unsweetened peanut butter (60 ml)
1 - 3 tablespoons milk of choice

toppings:
1.7 oz. / 50 g 80% dark chocolate
1 teaspoon coconut oil
Flaky sea salt
•
1. Mix all the ingredients together. Because protein powders absorb liquid differently depending on brand, you may not need the full 3 tablespoons of milk. Add slowly until the dough holds together and it’s not sticky
2. Roll into balls
3. Let set in the freezer for 30 minutes
4. Melt the chocolate in the microwave with the coconut oil
5. Dip the bites in the chocolate and top with flaky sea salt
6. Chill in the fridge until the chocolate is set
7. Store in an air tight container in the fridge or freezer

Ingredients
💫1 cup condensed milk
💫1 cup cocoa powder
💫Extra cocoa powder, for dusting
Method-
1. In a bowl, add condensed milk and microwave it for 1 minute. Alternatively, you can also cook it on the stove until it comes to a simmer.
2. Gradually sift the cocoa powder into the warm condensed milk, adding it in three batches and mixing well after each addition.
3. Once all the cocoa powder is fully incorporated, the mixture will become very thick. Transfer it to a 6-inch square dish lined with cling film.
4. Refrigerate it for at least 2 hours. Once set, demould it on a chopping board dusted with cocoa powder.
5. Dust more cocoa powder on top. Use a hot knife to cut them into 9 square truffles. Shape the edges with your hands.

180g unsalted butter
110g semi-sweet chocolate
2 tsps instant coffee powder
100g granulated sugar
100g soft brown sugar
2 eggs
1 tsp vanilla
60g cocoa powder
55g all purpose flour
1/2 tsp salt
1 cup of chocolate chunks

1. Melt the butter, semi sweet chocolate, and coffee powder over medium heat.
2. Beat the sugars, eggs, and vanilla on high speed with a machine until light in color.Add in the melted chocolate mixture and mix on low speed.
3. Fold in the cocoa powder, flour, and salt. Then fold in the chopped chocolate.
4. Place the batter in a 22×22cm pan lined with parchment paper and bake for 22-25 min at 175C.

This is literally the easiest dessert in the world, and probably the biggest taste-return on time taken.
This is Whipped Honey Coffee; a creamy, sweet coffee mixture served over vanilla ice cream.
- Whisk 150g runny honey with an electric whisk until thickened (around 5 minutes)
- Add 20g good quality instant coffee and 50ml hot water. Whisk for a further 5-10 minutes until thickened
- Optional - add dark chocolate shavings
- Serve over ice cream
