Out of all of the wing recipes we have, this has to be one of my favorites. These wings are smoked, then fried for the perfect blend of juicy chicken and a nice crispy skin. Save this recipe and give it a shot this weekend🔥 Ingredients * 2 dozen chicken wings * Meat Church The Gospel (sub Holy Voodoo, Hickory or Holy Gospel) Sauce * 1 C Frank's Hot Sauce * 1 stick unsalted butter Instructions Step 1 - Smoke the wings -Lay your wings on a wire rack. -Place the wings uncovered in the refrigerator for 8 hours or up to overnight to dry the skin out which helps crispiness. -Prepare your smoker to 225° -Remove the wings from the refrigerator. -Season with Meat Church The Gospel on all sides. -Place the wings in the smoker. -Smoke the wings until they reach an internal temperature of at least 165°. -Remove the wings from the smoker. Step 2 - Fry the wings -Heat oil in a large pot to 350°. We prefer peanut oil as it has a high smoke point. -Carefully lower the wings into the peanut oil. -Fry for 3 minutes or until you have reached your desired crispiness. Prepare the Sauce -Melt the butter. -Mix the butter and Frank's. -Place the wings in a steel bowl, coat with sauce and toss. -Remove the wings from the bowl. Cowboy Butter Wings These cowboy butter wings might be the crispiest, juiciest wings you've ever made, and it comes down to a couple tricks you might not be using yet. A quick soak in salt water does something magical to the meat, and a light dusting of cornstarch after drying creates that shatteringly crisp skin you usually only get from a deep fryer. And if you want the full experience, that restaurant-style ranch dressing recipe is waiting on my page. Cowboy Butter Wings Brine: ¼ cup kosher salt 4 cups cold water Chicken: 2 lbs chicken wings 1 tbsp cornstarch 1 tsp kosher salt (omit if brined) ½ tsp black pepper Cowboy Butter: 4 tbsp unsalted butter, room temp 1 tbsp fresh parsley, finely chopped 1 tbsp fresh chives, finely chopped 1 clove garlic, minced 1 tsp Dijon mustard 1 tsp fresh lemon juice 1 tsp smoked paprika ¼ tsp kosher salt ⅛ tsp cayenne pepper Instructions: 1. Brine the wings (recommended): Dissolve ¼ cup kosher salt in 4 cups cold water. Submerge wings and refrigerate 1-2 hours. Remove, rinse briefly, and pat dry with paper towels. 2. After drying, place wings in a large bowl and sprinkle with cornstarch. Toss until evenly coated. (If not brined, season with salt and pepper as well.) Oven Method: 1. Preheat oven to 425°F. Line a baking sheet with foil and place a wire rack on top. 2. Arrange wings in a single layer on the rack. 3. Roast until cooked through and skin is deeply crispy, 45-50 minutes. Grill Method: 1. Prepare a grill for medium-high indirect heat (around 375-400°F). If using charcoal, bank coals to one side. If using gas, turn off one burner. 2. Place wings on the cooler side of the grill, away from direct heat. 3. Cover and grill 25-30 minutes, flipping once halfway through. Move wings to direct heat and grill 5-10 minutes more, turning occasionally, until skin is charred and crispy and internal temperature reaches 165°F. 4. While wings cook, combine all cowboy butter ingredients in a large bowl and whisk until smooth. 5. Remove wings from oven or grill and transfer to the bowl with cowboy butter. Toss until well coated. How to Make Stuffed Chicken Wings 🍗🍗 INGREDIENTS: 24 large chicken wings (the bigger the better!) 3 large honey mustard sausages 3 large spicy Italian sausages 3 large plain pork sausages 2 lemons 5-6 cloves of garlic 1/4 cup soy sauce 1/4 cup honey 2 tbsp rice wine vinegar 1 tsp potato starch 1 spray can neutral vegetable oil 1/4 cup Franks Buffalo hot sauce 3 tbsp lemon pepper seasoning Toothpicks INSTRUCTIONS: 1. Remove your wings from the packaging, and pat them dry as best you can with paper towel. Place them on a sheet tray with a wire rack. 2. Separate the drumstick from the flat of each wing by cutting directly through the joint. Set your drumsticks to the side for later use. 3. Using a sharp pairing knife, you want to work the tip of your knife around bone where it is visible. If you’re looking directly down at the cross-section of your wing, it will look somewhat oval-shaped. On the two “thinner” ends of the oval, the meat is attached to the bone with a small piece of tissue. By releasing the meat from the bone at those points, it will be easier to scrape the meat down the bone. Throughout this process, keep the blade of your knife as flush against the bone as possible to ensure the best possible yield. 4. Once you’ve scraped the meat half way down the bone, you can pull it down the rest of the way, until the next joint where the wing tip begins. From here you can give the bones a twist and they should separate, leaving just the wingtip and the boneless flat meat. 5. Remove your sausages from their casings. The hot Italian + honey mustard sausages I left as-is, but I added the zest of 2 lemons to the plain pork sausages (the mix will be used for the lemon-pepper wings). 6. Transfer each sausage mix to a piping bag. Pipe the sausage mix into your boneless wing flaps, leaving just enough space for you to fold the excess skin over the farce. Poke a toothpick through each wing to seal them shut. 7. Place your stuffed wings back on your sheet tray with a wire rack. Let your wings dry out for 24 hours for best results. HOT HONEY BUFFALO BAKED CHICKEN WINGS Makes about 20 . INGREDIENTS: For the wings: - 2 lb chicken wings, flats and drums separated (about 20 pieces total), wing tips discarded - 1 Tbsp olive oil - 2 tsp baking powder - 1 tsp smoked paprika - 1/2 tsp garlic powder - 1/4 tsp onion powder - 1/4 tsp cayenne pepper - Kosher salt and black pepper . For the hot honey buffalo sauce: - 4 Tbsp (1/2 stick) butter - 1/2 cup Frank’s hot sauce - 3 Tbsp hot honey (you can also use regular honey and add a bit of cayenne pepper!) - 1/4 tsp smoked paprika - 1/4 tsp garlic powder - Kosher salt and black pepper . INSTRUCTIONS: 1) Preheat oven to 425F. Line a large baking sheet with parchment paper and set aside. 2) Use a paper towel to pat the wings as dry as possible, then place in a large bowl and toss with olive oil, baking powder, smoked paprika, garlic powder, onion powder, cayenne pepper, and generous pinches of salt and pepper. Transfer to baking sheet in a single layer, leaving an inch or two of space around each wing. Bake in preheated oven for 45-50 minutes, flipping once halfway, or until crispy on the outside and cooked through. 3) Meanwhile, combine the buffalo sauce ingredients in a small saucepan and place over medium heat. Whisk until combined, then remove from heat and let cool a bit while the wings finish baking. 4) Once the wings are done, place them in a clean large bowl and pour over the sauce. We’re a big fan of @meatchurch and @spiceology in our house - let sit uncovered (this matters) minimum of 2 hours all the way up 24 hours - get smoker to temp first before putting wings on - smoke at 225°F continuously for 2 hours And if all else fails, get yourself a husband who loves smoking anything on the @traegergrills (@kyles.cultivations ) 😉 #easyrecipes #fyp #tradwifelife #feedinglittles
