Lemon and blueberry focaccia 🍋🫐 you asked and so here’s the recipe👇 Ingredients: 350ml warm water 40g sugar 7g instant yeast 20ml olive oil (plus extra for the tray/dimpling) 400g strong white flour 1.5 tsp salt Toppings: Zest 1/2 lemon 100g blueberries 1-2 tbsp lemon curd Drizzle of maple syrup Method: 1. Add the yeast, 1 tsp sugar and water to a bowl and let sit for 5 mins. Stir in the oil and then pour in the flour, the rest of the sugar and salt. 2. Mix well and knead for 10mins. Knead on a wet countertop as this is a super sticky dough! You want the dough to be stretchy consistency once kneaded. 3. Place the dough back into a large bowl, cover and let proof for 1 hour or until doubled in size 4. Pour a little water onto your surface and then, once proofed, tip the dough out. Stretch one end of the dough up and fold into the middle, repeat twice and do 2 coil folds. 5. Oil your tray and then place the dough in the middle. Cover and leave to proof for 1 hour until puffed up. 6. Preheat the oven to 200C. Once proofed, drizzle the dough with oil and add the lemon zest. Use your hands to dimple as shown. Top with the blueberries and dollops of cured. 7. Bake for 23-25 mins or until golden, drizzle with maple syrup and enjoy!! #focaccia #bread #recipeshare

The dimples help the dough to stay flat. If you’ve made some dough and you’re worried it’s not going to rise, remember that you can always turn it into a focaccia. Just plop your bread dough onto a tray, add some olive oil and sea salt and any other toppings of your choice, dimple the dough, and then bake until golden brown. I was making this mistake for YEARS, but now that I’ve adjusted my technique, my focaccia is 2x the size. Here’s what you gotta know: 🌟 if you want fluffy, not flat focaccia, let it proof again AFTER dimpling! A lot of recipes call for you to dimple the dough (i.e. oil the top and press your fingers into the dough like you’re playing a keyboard), then slide it right into the oven. I don’t do this, and here’s why: 🌟 Dimpling deflates the dough, removing larger air bubbles for a more consistent texture. This step is important as it keeps the dough from ballooning as it bakes. But baking immediately after dimpling doesn’t leave the dough any time to regain that volume, resulting in a flatter focaccia. Letting the dough proof for another 45min-1hr after dimpling helps it regain that fluffiness before baking, resulting in taller focaccia with nice even air bubbles. Perfect for building sandwiches! 🌟 If your focaccia keeps turning out flat with a tight, dense crumb, you’re probably underproofing it. This is the no. 1 trap beginners fall into when making any type of bread - usually because they’re going by the times listed on the recipe rather than by look and feel. Yeast is alive! It reacts with your environment! And that leads me to my next point… 🌟 Proofing times will vary wildly based on your environment. When i moved to a tropical climate, i noticed that all my breads proofed much faster - I’m talking a quarter of the time. Watch your dough and go by visual cues (puffiness, jiggle, bubbles) rather than time. 🌟 Speaking of time… a cold-ferment is your friend. When making focaccia (a very laid-back bread, I might add), i let the fridge do most of the work. Instead of waiting for it to rise at room temp, i let the dough hang out in the fridge in a covered container for 12-24 hours. Not only does this help the bread develop more complex flavor, but it requires way less babysitting! Just plop the dough into your greased baking pan and let it proof at room temp before dimpling, proofing pt 2, and baking. You can apply this knowledge with any focaccia recipe - pick your fav and go forth! And follow @whatszoecooking for more baking wisdom 😎

Dimpling sourdough focaccia! . Updating my recipe thanks to @deanneveliky’s to have a cold bulk followed by a long rest in the pan while gently stretching. . I will be posting the full recipe on the blog but I can't remember who asked me for this formula so I thought I'd just share it with everyone: . Recipe: 75% Strong bread flour 15% Fresh milled whole wheat 10% Semolina rimacinata 85% Hydration 33% Levain 2.5% Olive oil 2.2% Salt . DDT 26-28C. . Autolyse the flour and water for 1 hour. Mix in the levain and rest for 30 minutes. Mix in the salt and bulk for 3 hours with 2-3 folds. Place the dough in the fridge overnight. . Remove the dough from the fridge for about 1 hour before you want to shape it. Preshape the dough and place it into an oiled focaccia pan. Allow the dough to proof and rest for 3-4 hours depending on ambient temp slowly stretching it (don't tear or force it) until it fills the pan. . Pour on some oil and dimple it pressing to the bottom of the pan. Garnish as you wish and have some fun with it. . Bake at 475F for about 30 minutes! .
