MRHow to Season a New Donabe
Here’s Donabe 101! When you get a new #donabe , the first thing you do is seasoning it by making a very thick porridge in it. I normally use any leftover rice and water. It’s a very easy one time process and is called Medome in Japanese. Donabe is naturally porous so by seasoning it, the starch of the rice fills tiny gaps and helps the #donabe become even more durable and also helps making it less likely to crack and leak. Put a lot of love to your new #donabe while seasoning it so it will last and bring so much joy to you for so many years!
Common questions 1: Do you wash a #donabe before seasoning? Answer: Yes, it’s recommended, but please make sure the outer bottom is dry before setting it over heat.
Common question 2: Can I eat the porridge after seasoning a #donabe ?
Answer: Yes, it’s still edible. But, to season, you want to make a really thick porridge (almost pasty), so it won’t be nice and smooth for your palate. So, you might just want to compost it.
Common question 3: Can I use flour, brown rice, or any other starch/ grain to season a #donabe ?
Answer: For a high quality #donabe such as Iga-yaki #donabe I use is made with especially coarse clay and very porous, so the starch level of short grain rice is considered to be most ideal. Also, it’s important to start with already cooked rice.

YI🍚 Sansho Chicken Donabe
✨ Found sansho peppers at the farmers market so I had to make this!! So freaking good and comforting 🥹🥹
✨ Can do a longer video if anyone wants 🤣
Ingredients:
- chicken
- 3 Tbsp light soy sauce or 2 tablespoon regular
- 2 Tbsp sake
- 1 Tbsp brown sugar
- 2 cloves garlic
Donabe
- 2 cups of rice(short-grained), washed
- 1 1/4 cup dashi
- 1 inch ginger, julienned
- A spoon of sansho peppercorn

GRLittle tips to look help your cookware perform and last longer ✌️
Claypots are one of my favourite cookwares of all times! It’s used in almost every single cuisine. It’s healthy, simple to use, and durable!
Before use, simply cook something starchy for about 20 min, making sure you coat all inner walls ( Clay is dry and pores are closed, so need to gently let them expand)
After doing this, Claypot is harder to crack and has a very fine non-stick natural coating.
Also, don’t forget as it’s porous, avoid using detergents when washing. Warm water is more than enough.

JUThe Junsei Donabe
The perfect dish to seek comfort on a cold winters night. It’s a special dish that takes 45 minutes to make from your order.
Rice is soaked and simmered in dashi in a clay pot , before being finished chicken and mushroom and steamed to perfection.
The donabe is brought to the table, the lid is lifted, the fragrant steam is released, sauces and mixed for you whilst you enjoy the table theatre. Then you sit back, enjoy and realised that every one of those 45 minutes were worth the wait.
The Junsei donabe are available in our dinner menu.

KRDo you have a kitchen appliance you are just completely obsessed with? For me it’s my donabe that I just bought this winter. Donabe is a Japanese clay pot, but lots of Asian cuisines use similar clay pots for cooking. Donabe has been so useful for me all winter, making hotpot after hotpot. Now that spring is here, I think I may transition to making more rice dishes.
