This is gundruk — the taste of home in Nepali kitchens. We take winter greens — mustard, radish, even cauliflower leaves — wash them and let it air dry few hours until it wilts and mash it gently put it in a jar/container let them ferment into a gentle sour for few days or a week, dry them in the sun, and save that flavor for months. Our grandparents did this out of necessity: when the hills turned cold and fresh saag disappeared, gundruk kept minerals and tang on the plate. It’s more than a recipe — it’s a preservation of seasons and a little science bubbling in a clay pot. After it’s dried, we crumble it into jhol for that cozy, smoky-sour soup… or toss it into achar that wakes up a plain plate of rice. One jar travels through harvests, winters, and festivals — and somehow tastes like all of them at once. Call it gundruk, kundruk — either way, this is Nepal in a spoon. Gundruk - A traditional Nepali food. It’s made by fermenting leafy green vegetables, usually mustard leaves, radish leaves, cauliflower leaves, or even spinach. After fermentation, the leaves are sun-dried and stored to be consumed throughout the year. It is one of Nepal’s most popular fermented foods that tastes tangy, slightly sour, is rich in probiotics, and often cooked into soups (gundruk ko jhol) or used in pickles (gundruk ko achar) 🤤 For centuries, gundruk has been a way for Nepali households and a big part of our culture. Especially in villages, to preserve surplus greens after harvest. It made sure vegetables were available even in winter when fresh produce was scarce. GUNDRUK KO AACHAR RECIPE 🥘 Soak gundruk in warm water for a minute or two, squeeze and separate. Fry it for a minute in mustard oil with fenugreek seeds. Now add roasted bhatmas (soybean), thinly sliced onions and chopped coriander leaves. Add fried tomatoes, garlic and ginger. Add Salt and red chilli as per taste and mix really well. Toast peanuts, sesame seeds, and red chilies, grind ,and add to the bowl. Add boiled potatoes, onions, green chilies, coriander, turmeric, chili powder, and salt. Kandali ka saag recipe 🌾 Ingredients 🌾kandali or stinging nettle :500 gm 🌾Pahadi palak or normal palak:200 gm 🌾Garlic cloves smashed:10 to 12 🌾Whole red chillies:4 to 6 🌾Coriander powder:1 Tbsp 🌾Red chilli powder:1 tsp 🌾Haldi powder: 1 tsp 🌾Salt: according to taste Method 👩‍🍳👩‍🍳 🌾Wash the kandali well with the help of chimta, do not touch it as raw kandali causes itchiness. 🌾Wash the palak as well. In a kadhai or pan take water and when it is boiling add kandali leaves and palak leaves. Boil for 15 minutes. Then grind it either on sil batta or in blender. 🌾In a kadhai take muatard oil and add jakhya, whole red chillies and garlic. Cook till garlic is brown as this gives a very nice flavour. 🌾Add saag and mix coriander powder, red chilli powder and turmeric water with a little bit of water to make a paste and add this paste to the saag.
