HAIn this lecture, I explain the reaction of chlorogenic acid (present in coffee beans) with aqueous sodium hydroxide (NaOH) under different conditions.
We analyze the structure of chlorogenic acid and identify its functional groups, including:
• Carboxylic acid group
• Phenolic –OH groups
• Ester linkage
Then we determine how many moles of NaOH react with 1 mole of chlorogenic acid:
• In the cold state → 3 moles of NaOH
• In the hot state → 4 moles of NaOH
The difference occurs because, under hot conditions, ester hydrolysis takes place in addition to neutralization of acidic protons.
This lecture helps students understand:
• Acid–base reactions
• Phenoxide formation
• Sodium carboxylate formation
• Base hydrolysis of esters
• Concept-based mole calculation
