NACost of grinding 3kg of Atta⬇️
It was ₹30! 😱😳
As cheap as that!
You can buy 1kg of whole grains from ₹40-60.
And you’ll easily get from 1.5kg to 2kg of wheat flour from it
Cost of grinding: ₹10-20.
Total Cost of 2kg of Atta: ₹60-80.
Packaged 2kg Atta comes at ₹110-150.
It is definitely much cheaper to get our own flours grounded so that we are well aware of the purity of our flours, when compared to the packaged ones.
Again, it may not be easily available to everyone as it isn’t present in every neighbourhood.
But like my mom, if you have one in your neighbourhood, opt for their services. This keeps these services alive for longer and helps make our food products much more healthier too.
The shop showed is:

They had machines for grinding wheat, rice, chilli, coriander and turmeric.
They usually give it in the containers or packets that we give them. But this time they used a plastic packet as our container handle was broken. But we’ll be reusing that plastic packet every time from now.
My mom generally gets mostly all flours and spices ground at this store.

FLA peek behind the scenes ⚙️⚙️⚙️.
When your entire operation relies on the condition of two 2000 pound slabs of rock, caring for them is key.
Maintenance is everything. Our business and mission would not be possible if it wasn't for this stone mill designed and built by @newamericanstonemills, and the team who operates it.
This machine is the workhorse of the company, and every 6-9 months it needs to be fully disassembled for maintenance. This process involves roughing up the entire surface of the two 48 inch millstones using an air hammer powered by a compressor.
The process:
1. Mill extra flour in the preceding days to ensure you have enough supply while the mill is undergoing maintenance.
2. Gather a stack of wooden pallets and disassemble the mill.
3. Using the crane, carefully unscrew and lift the top millstone off of the mill, flip it over, and place on the stack of pallets.
4. Using the air hammer and compressor, grind the entire surface of both millstones, covering every inch in order to create a rough, but even, surface area. This allows the stones to more efficiently cut the outer hull of the whole grains during the milling process.
5. Flip the top stone over again with the crane, and place it back on top of the other millstone. Power up the mill, and using your best listening skills, listen to the sound of the millstones rubbing together. You will hear the places where the stones are rubbing together, which will indicate where there are still some uneven patches.
6. Take the top millstone off again and flip it over once again and stack on the pallet stack. Using a red crayon and your hands, identify the places by sight and feel that need to be air hammered again. You will see them as shiny areas that have been marked from the millstones rubbing together.
7. Repeat this process until there are no more uneven patches as needed.
It takes a team of three, two days, and meticulous planning to ensure the safety of all involved as well as efficiency for the process.

One of the biggest challenges with fresh-milled flour is the cost of the mill and baking with fresh-milled flour and sourdough. Although better basics does remove some of the bran and germ from their flour, the nutrient profile is much closer to home-milled flour than anything I’ve found in the store.
I’ll be able to decrease the amount of white organic bread flour in our home. I’m thrilled!

TODon’t overthink it! Get good at feeding your sourdough starter and learning how long it takes to rise and fall. That timeframe is similar to your dough. For me, my dough is usually ready to shape 6 hours after mixing, however I am typically doing 20 in each bin which dough warmer because there is so much of it.
