Let’s talk about catkins shall we?! They’re a funny little wild food that I avoided harvesting properly for quite some time, because I didn’t really see the point 😅 They taste really bitter and fibrous off the tree (if you’re going to try them raw - I recommend the small, unopened ones, they will still be bitter BUT at least they’re crunchy and not so fibrous!). I also tried them pickled once and really didn’t enjoy them at all. And finally the nutrition information we had about them seemed super vague. 🤷‍♀️ HOWEVER, last year I was researching the benefits and effects of various pollens; and it turns out, pollen is amazing! ✨💛 It’s generally high in protein and mineral content and some pollens have specific medicinal properties (pine pollen for example contains phytoandrogens — a plant compounds structurally similar to testosterone that can support male vitality, energy, and hormonal balance 💪) So, while they’re aren’t really any specific studies on hazel catkins, I figured, they’re covered in wonderful pollen and they deserve a spot in my wild food larder, especially because they grow in the thousands! 🌱🌳 I think they’re best when they’re roasted (I put my trays into a preheated oven at 150C for 15 minutes) and then dehydrated (turn the oven all the way down and leave the door slightly ajar for a few hours or until the male flowers can easily be rubbed off the stems). They taste a little nutty and make a wonder sprinkle for granola or these sticky date bars! 😍 The tea has traditionally been made to fight off flus and colds (although other herbs are probably better suited for that purpose) and to support kidney function! It tastes nice! Sweet and again, a bit nutty! 🫖 When foraging hazel catkins, make sure you know your tree well: catkins appear before the leaves and in clusters, and you should only take a small proportion of a tree’s catkins so you don’t impact pollination or the following nut crop. Remember to pick on a sunny day and sprinkle as you go! 🥰 ☀️ #hazel #hazelcatkin #foraging

Every year I become obsessed with some plant or another, and this year, it’s bramble stems! 😍 An abundant material that can be made into baskets, woven decorations and even… hair pins? Hair clasps? I wasn’t actually sure what to call these! ✨ I saw some similar creations over on Pinterest but couldn’t see a tutorial anywhere so it took me a long time to figure out how to weave it into something that held together. 🤝 The trick is to make sure the second ‘fish’ as I’m calling them, goes alternately over and under every bit of bramble that it passes. 🌱 I’ve tried to demonstrate it as well as I could in the video, but it might also be useful to take a screenshot and just have a longer look! 💚 Anyway, so many of you asked for a tutorial after I posted this in my stories, so here it is! I hope this gets you outside, admiring the abundance of craft materials we have access to, and I hope you get a chance to make one, or two! 🥹☀️ #foraging #bramble #weavingproject #wildweaving

Eating pickleweed! It's actually in the amaranth family (Amaranthaceae). This explains the seeds being edible. The seeds (and greens) of many Amaranthaceous plants were historically important food sources for Indigenous peoples in North America. I write about this at length in my book, "Native Food Plants of Texas" (link in bio). Note that the Indigenous peoples mentioned are still living cultures and when I use past tense it is to describe practices in a historical context. Dandelion coffee ice cream is one of the coolest things I’ve made in a while. It tastes like wild espresso cookies and cream, and the best part is the dried roots, which you leave in the ice cream. The roots of dandelion coffee go back a few hundred years to the 1700’s. It caught on in a few places and you can still buy dried dandelion roots in the bulk section at coops. Recipe’s on my site this week. #dandelioncoffee #chicory #foraging #thatswild #foragerchef

Foraging taught me to see ecosystems, not ingredients. Three years of harvesting wild food changed how I understand regenerative food systems and sustainable seafood. Most people think foraging is about free food. What they miss: the labor, the skill, the respect for the ocean and land that feeds us. From wading for sea urchin in Mendocino kelp forests to harvesting mussels and seaweed along the California coast every wild ingredient tells a story about regenerative ocean health. Grateful to @flora.fungi.adventures for teaching me the skills, guiding every adventure, and being the experts who made this possible. Their knowledge enabled me to bring real foraging experience to my work teaching institutional chefs about sustainable seafood sourcing and regenerative food systems. This is what sustainable wild food harvesting actually looks like. Not theory. Experience from the water, the rocks, and the fire. Send this to someone who needs to go on wild food adventures with you 👇 #SustainableSeafood #WildFoodForaging #RegenerativeOcean #OceanConservation #seaweedharvesting
