I remember the exact moment everything clicked. I was at the store, cart full of the “usual” – those colorful pouches, crackers in individual packages, frozen nuggets promising my kids would actually eat dinner. 10 things I make from scratch for my family of five, to reduce UPFs in our diet, whilst utilising batch cooking to keep convenience. 1. Cooking sauces. No more jars, just made from scratch sauces whether it’s for pasta, bakes, meat dishes etc. I will also batch my most common sauces so I have them portioned up in the freezer for convenience. 2. Breakfast cereals. No more high sugar UPF cereal, just made from scratch chunky granola. I do a big batch every 3 weeks and store it in glass jars. 3. Biscuits. I do a huge batch of oaty dark chocolate chip cookies every 3 weeks instead of buying biscuits and chocolate bars. 4. Pizzas. I make a big batch of made from scratch pizza dough, top them and freeze them uncooked for easy homemade frozen pizzas. 5. Bread. I try to make a sandwich loaf and focaccia each week, then a crusty loaf to go with evening meals. I’m not 100% on cutting out shop brought bread yet so we also buy @coopuk sourdough which is by far the best 8’ve found. 6. Chicken nuggets. Instead of buying UPF frozen nuggets I batch my own using chicken mini fillets and either homemade or panko breadcrumbs. I blast freeze them until hard then portion them into zip lock bags. 7. Oven chips. I no longer buy UPF chips, instead I make my own, coating them in flour then olive oil and seasoning and I either air fry or oven bake them. 8. Sweet treats. I bake lots, cupcakes, muffins, Bundt loaves, fruit cakes, biscuits, tray baked etc. 9. Soup. Why spend a fortune on tin or shop brought soup which often has so many unnecessary ingredients when making it from scratch is so simple. I’ll do a big batch and portion it up, some for the week and some to freeze. 10. Pastry. I used to always buy pastry but now I always make shortcrust for made from scratch pies and quiches. RZ Sandwich Bread Yield: 1 standard loaf Ingredients 1 1/2 to 2 cups warm water about 105°F - 110°F warm, not hot 2¼ tsp active dry yeast or 1 packet 2 tbsp honey or sugar 2 tbsp olive oil or melted butter 1 1/2 tsp salt 3½ cups all-purpose flour or half AP + half bread flour for extra chew (plus more as needed) Directions • In a small bowl or liquid measuring cup, combine the warm water, yeast, and honey/or sugar. Stir gently and let sit for 5–10 minutes, until the mixture becomes foamy and activated. Stir in the salt and oil. • To a large bowl, add the flour and pour in the yeast mixture. Using a wooden spoon or Danish dough hook, mix until a soft, slightly tacky dough forms. • Knead the dough for 5–7 minutes by hand or 3–4 minutes using a stand mixer until smooth, elastic, and cohesive. • Place the dough into a lightly greased bowl, cover, and allow it to rise for 25–30 minutes, or until doubled in size. While it rises, grease a loaf pan and set it aside. • Once doubled, gently punch down the dough to release excess air. Fold the dough into itself, then transfer it to a lightly floured work surface and gently stretch it out. • Shape the dough into a loaf using a tuck-and-fold method, creating surface tension as you roll it into shape. Place the shaped dough into the prepared loaf pan, cover, and let rise again for 15–20 minutes. • Bake at 375°F (190°C) for 25–30 minutes, or until the loaf is golden brown and sounds hollow when tapped. • Immediately brush the top with butter or olive oil for a soft, tender sandwich crust. • Remove the bread from the loaf pan and transfer it to a cooling rack to prevent the bottom from becoming soggy. • Allow the bread to cool for at least 20 minutes before slicing. Chef notes for optimal flavor boost these are optional but so good • Swap ¼ cup water for warm milk=softer crumb • Add ½ tsp garlic powder or onion powder = savory sandwich loaf • Put aside extra flour for dusting and managing stickiness • Add 1 tbsp maple syrup instead of sugar = subtle depth Texture Notes • Soft enough for PB&J • Strong enough for grilled cheese • Doesn’t crumble like store bread #sandwichbread #homemadebread #fromscratch

One thing that really surprised me this year was that everything I learnt to make from scratch used four ingredients or less. It was a quiet reminder that good food doesn’t have to be complicated, and that a lot of what we buy at the supermarket has been made far more complex than it needs to be. Recipes for these are all on my page 🫶🏻 Cooking from scratch was one of my favourite hobbies in 2025, and I can’t wait to see what I learn to make next in 2026 (tomorrow!?!).
