The key thing to note is that there’s a significant difference between what we consider processed meats and what are actually more nefarious offenders in the processed meats category. Long story short, adding salt to meat technically makes it cured and “processed,” but it’s not the same as what is categorized in many of the processed meat demonization stories you see out there. There’s a very stark difference between a lunchables meat snack and a fresh slice of naturally cured Parma Ham from Italy 🥓 #protein
