MOMoqueca is a traditional Brazilian seafood stew flavoured with azeite de dendê (red palm fruit oil)*, bell peppers, coconut, lime and chilli- it also happens to be one of my all time favourite dishes. Here I’ve put a few untraditional twists on it; I’ve included some spices (which are not Brazilian in origin but are nonetheless ubiquitous in Brazilian cuisine) and I’ve also turned the dish into a fish burger (it’s usually eaten as a stew with rice and salad). It's extremely saucy and messy but you absolutely have to eat it with your hands. Hope you love it as much as I do! RAButternut squash and sage is one of my favorite flavor pairings, so, when I saw this recipe for butternut and sage lasagne gratin in Mezcla: Recipes to Excite by @ixta.belfrage I knew I had to make it for our #rainydaybitescookbookclub lasagne party today!
This recipe couldn’t be easier to make too as the noodles and squash are layered together uncooked just like a gratin. Picture layers of pasta, a sauce made with cream, parm, and nutmeg, and a layer of thin slices of squash, cherry tomatoes, garlic, tomato paste, and chopped sage all stacked on top of each other in layers, covered with stock and then baked until bubbly and golden. In the last couple of minutes fresh sage leaves which were sitting in olive oil(infusing the oil with bright herbaceous flavor too) are scattered over the top. This was seriously so good and a great vegetarian main too.
I made one change to the recipe which was to add fresh mozzarella to this recipe as I can’t resist that extra bit of melted cheesy goodness in my lasagne. This is a must-make recipe and one that will go on repeat here too. My mom loved it as well, so that was a big win for me too.
Our group had the choice of this vegetarian lasagne or the shrimp lasagne with habanero oil today for our lasagne party. Can’t wait to see them all! I’ll post a roundup in my Stories after everyone has had a chance to join in.
