Resharing the garlic girl mayo recipe so you can get a batch ready for a new recipe I’m dropping in the morning that needs it!! Be ready for garlic breath! 🥵
Garlic Confit Mayo
25 garlic cloves (from 2 heads)
1 cup neutral oil
2 sprigs thyme
2 sprigs rosemary
2 tablespoons lemon juice
1 teaspoon Dijon mustard
1 large egg yolk
Salt and pepper
In a small saucepan, cover the garlic with the oil. Bring to a simmer over medium heat and cook for 15 to 20 minutes until lightly golden. Remove from the heat and add the thyme and rosemary. Let cool completely, then discard herbs.
Transfer the cooled oil and garlic to a quart container with the lemon juice, mustard, egg yolk, salt, and pepper. Blend with an immersion blender, starting at the bottom and working up, until a thick mayo forms. Transfer to an airtight container and store in the fridge for up to one week. Makes about 1 cup.
