Many new home makers feel defeated, but sometimes it's not them it's the beans. "It's not you, it's me," says the cocoa bean. Not all cocoa beans are created equal. Aside from bulk vs fine, not all fine cacao is going to lead to success. There are a ton of factors (batches/season/quality checks/consistency). And no, sourcing a Criollo isn't going to guarantee great flavour. Even distributors I like sometimes carry beans or batches of beans I'm not crazy about. When you have an incredibly aromatic bean that is not bitter, nor too astringent or acidic - it's going to be hard to mess that up. So don't take your cocoa bean sourcing lightly. If you're a beginner - use beans from reputable distributors first. Then, select the beans that makers you love had success with. You'll have a higher success rate. Do a nice mid roast, and refine. Many beginners think the roasted bean is going to taste incredible. It often won't. You won't know what the final flavour is until you refine. Refine, add your sugar, be patient, and taste taste taste along the way. Many new makers refine too short - don't be afraid to take it to 2-3 days. That could be the time you needed to go from disappointment to excitement. Longer refining times do not always mean flat flavour. These beans here are the Chanthaburi Thailand beans from Canadian distributor @mabco.ca A beautiful bean that is hard to mess up. Remember, all you're doing is roasting a seed and grinding it up with sugar. I say that not to minimize the complexity of it, but to ease your nerves. Chocolate making isn't for everyone, but it's for more than you think. Have fun, experiment, take some artistic license and enjoy! A couple of Melanger tips 1- toast your nuts low and slow, you’re aiming to semi dry them, add a light toasted flavour to them, 150°c for 50 minutes is better than high heat for a short time 2- add 50g of cocoa butter to your melanger when it starts running, it will help lubricate the wheels and also speed up the first breakdown of the nuts to create a liquid paste. 3- it’s not a mixers, it’s a refiner, so try not to add large amounts or large nut pieces 4- Taste it, your tongue will tell you if it’s smooth enough! 5- SALT it needs salt… the opposite of sweet is sour, the opposite of bitter is salt…. Salt will improve the flavour 6- sieve it after your mix is complete, firstly to extract any nut pieces that will block your piping bags and also, ensure no foreign bodies are in the mix. 7- measure what you put in the bags, ideally in an amount compatible with your moulds. 8- label it properly, with all relevant info for the mix If you don’t make your own Pralines, Giandujas or Nut Pastes you should, they are cost effective, highly flavoured, great shelf life and above all easy to make. #melanger #refiners #nutpaste #hazelnuts #praline #gianduja #fillings #makeyourown #homemade #bonbons #bonbonchocolat #chocolat #shokolad #chocolate #almondpraline #chocolatier #chocolatiersofinstagram
