FLHyderabadi Mutton Biryani😍
Ingredients for marination:
• Mutton – 1 kg
• Salt – to taste
• Turmeric powder – 1.5 tsp
• Red chilli powder – 3 tbsp
• Garam masala – 1.5 tbsp
• Coriander powder – 1 tbsp
• Ginger-garlic paste – 3 tbsp
• Raw papaya paste – 1.5 tbsp
• Curd – 1.5 cups
• Whole spices:
• Cinnamon
• Cloves
• Cardamom
• Javitri (mace)
• Star anise
• Shahi jeera
• Green chillies – 6–7 (sliced)
• Fried onions – 1 cup
• Mint leaves – a handful
• Coriander leaves – a handful
• Lemon juice – 2 tbsp
• Oil – ¼ cup
Method:
1. Combine all the above ingredients in a bowl.
2. Mix well with the mutton.
3. Rest (marinate) for 30 minutes.

👉 Rice Preparation
Ingredients:
• Basmati rice – ¾ kg
• Water – 3 litres
• Whole biryani spices
• Salt – to taste
• Oil – 1 tsp
• Mint leaves – few
• Coriander leaves – few
Method:
1. Wash and soak basmati rice for 30 minutes.
2. Boil 3 litres of water in a pot.
3. Add whole spices, salt, oil, mint and coriander leaves.
4. Add soaked rice and cook till 60% done.
5. Drain the rice and keep aside.

👉 Layering & Dum Cooking
1. Spread the partially cooked rice over the marinated mutton.
(Do not press the rice, just sprinkle evenly.)
2. Add:
• Fried onions
• Saffron milk
• Ghee
3. Pour ½ cup of the rice-boiled water from the sides.
4. Seal the pot properly and place a weight on the lid.
5. Keep a tawa on the stove and place the biryani pot on it.
6. Cook on high flame for 10 minutes, then reduce flame and cook further on dum.
