STOP scrolling 🛑 this might be the most addictive Passover recipe you’ll make this year. If you’ve never had Matzah Arayes, get ready… crispy matzah on the outside, juicy spiced meat on the inside, and finished with a drizzle of creamy tehina. Absolute perfection✨ I like using Yehuda matzah for this recipe because it softens beautifully without ripping or breaking, which makes it perfect for folding and crisping up in the pan. Once you try these, I promise they’ll become a Pesach staple in your home too. Ingredients • 4 matzah squares Meat Filling • 1 pound ground beef (or any ground meat of choice) • 1 onion, finely chopped • 4 garlic cloves, finely chopped • 1 red pepper, finely chopped • 1 bunch parsley, finely chopped • 1 red chili, finely chopped (optional) • ¼ cup oil • 1 tbsp salt • 1 tsp black pepper • 1 tbsp paprika • ½ tsp cinnamon Tehina Dressing • 1 cup pure sesame paste (tehina) or almond butter • ¾ cup water • 5 tbsp lemon juice • 1 tsp salt • 2 garlic cloves (optional) For Garnish • chopped parsley • sliced red chilies Directions 1. Wet matzah under running water and place in a clean towel until flexible but not falling apart. If needed, reset an additional time and wrap again. 2. In a bowl, mix ground meat, onion, garlic, red pepper, parsley, and chili. 3. Cut each softened matzah into four squares. 4. Place a heaping tablespoon of meat on each square, spreading toward three corners. Fold into a triangle and press the filling to the edges. 5. Heat oil in a pan over medium heat. Cook arayes face down about 5 minutes until crisp, flip and cook another 5 minutes. 6. Using tongs, sear the exposed meat sides briefly. 7. Transfer to a rack to drain excess oil. 8. Whisk tehina, water, lemon juice, salt, and garlic until smooth. 9. Drizzle with tehina and garnish with parsley and sliced red chilies. Serve warm and enjoy. 🌿This is one of my favorite Passover side dishes. It presents beautiful for the Seder and yes, you can make it in advance and freeze it. Make sure to save this one. 🙌🙌 Mushroom Pesto Tart @erin.eats.mtl Ingredients: Crust: 1 egg 1/2 cup potato starch 1 1/2 cups almond flour 1/2 cup extra virgin olive oil 1/2 tsp salt 1 tsp baking powder Filling: 2 shallots, peeled and chopped 16 oz brown mushrooms, cleaned and sliced 1 cup spinach (you can also use frozen) 1 garlic clove 1/2 cup crushed tomatoes 2 tbsp pesto (see below) Salt and pepper Glaze: 1 egg 1/2 tbsp potato starch Directions: 1) Preheat oven to 350°F. 2) In a bowl, combine all crust ingredients. You can add some dried basil or rosemary if you’d like. Form into a ball and carefully spread at the bottom of a pie plate. 3) Bake for 10 minutes. 4) In the meantime, sauté shallots over medium heat. Add mushrooms and sauté until liquid from them evaporated. Push the mushrooms to one side of the pan and add spinach - sauté until liquid evaporate. Mix everything together. Add garlic clove, crushed tomatoes, salt and pepper -mix well. Sauté for another few minutes. Once mixture has cooled, mix in pesto sauce and pour it into the cooked tart crust. 5) Mix together remaining egg, potato starch, salt & pepper. Pour over vegetables. 6) Bake for an additional 30 minutes. To make pesto, blend the following in a food processor (I make a big batch and freeze in portions): 1/4 cup extra virgin olive oil 1 cup packed basil leaves 1-3 garlic cloves 1-2 tbsp nuts (ie. pine nuts, pistachios, walnuts…) 1/2 tsp salt (omit if nuts are salted) Freshly ground pepper #mushroomrecipes #pestosauce #glutenfreerecipes #passover #passoverrecipes

Matzo Blintzes with Beef Filling. - 8-10 matzo sheets;; - 500 gr ground beef; - 1/2 onion; - 1 carrot; - 1/2 zucchini; - salt, pepper to taste. . - 3 egss; - salt. Finely chop the onion. Grate the carrot on a coarse grater and grate the zucchini grate it on a fine grater and gently squeeze out the excess moisture. Heat a little olive oil in a frying pan over medium heat. Add the chopped onion and sauté until it becomes soft and translucent. Add the grated carrot and cook for a few more minutes until slightly oftened. Add the ground beef to the pan with the onions and carrots, mix well, Season with salt and pepper, add sweet paprika, and cook until the minced meat is done. Beat three eggs with a fork, then season with salt and pepper. Prepare a shallow dish with water large enough to fit a sheet of matzo. Briefly dip each matzo sheet into the water for a few seconds until it softens. Do not soak for too long or it may break apart. Remove the softened matzo and place it on a kitchen towel for 5–10 minutes to absorb excess moisture. Spread the softened matzo on a stick and cut it in half, put about a tablespoon of filling on each half of the matzo, carefully roll each half of the matzo into a roll. Dip each filled matzah roll into the egg mixture and fry on both sides until golden brown. Chag Sameach! #miriamskitchen #passover #beef #blintzes #passoverblintzes

Most popular Passover cake 🤎 The famous Crembo Cake✨ Gluten free✔️Dairy free✔️Nut free✔️ Serves about 12 people I use a 1/2 sheet baking sheet Ingredients: For base •6 large room temperature eggs (super important) •1/4 cup granulated sugar •1 packet (80 grams) Osem chocolate pudding or any pudding brand of choice For cream center •2 cups heavy whipping cream (can be made with Parve whipping cream) •3/4 cup of milk (use alternative milk for Parve) •1 packet (80 grams) Osem vanilla pudding or any pudding brand of choice For chocolate topping •2 full cup of semi sweet chocolate chips •2 tbsp. coconut oil Directions: * Preheat the oven to 350°F. * Separate eggs and place the whites in your mixer bowl and keep the yolks. * Using a mixer with a whip attachment, whip egg whites on low until slightly foamy. Increase speed to medium and gradually add sugar, whipping until peaks form (about 5 minutes). * Remove from the mixer, add egg yolks gradually, then fold in pudding. * Spray your parchment paper and pour the batter, smoothing the top. Bake for 17 minutes. * Wash and dry the mixer bowl and attachment. For the cream filling, combine heavy cream, milk, and vanilla pudding. Mix on low, then increase speed to medium and finally high for about 5 minutes until you have a beautiful, thick cream. * While the cake is still warm, gently roll it short side in. This method will help the cake. Keep a rolled shape while cooling. * Spread the cream over the cake, ensuring even coverage leaving about 2 inches on one side without the cream. This will help so that the cream won’t ooze out while rolling. * Prepare the chocolate topping by melting chocolate chips and oil in the microwave in 30-second increments (about 2 times) until completely melted. * For best results place your cake on a wire rack over baking sheet and pour your chocolate sauce over the entire cake. * optional: pipe dollops of cream on top of your chocolate and dust with cocoa powder. * Keep refrigerated! Chocolate will harden, if you’d like a softer topping, allow the cake to come to room temperature or cut with a warm knife. #sivanskitchen #passover #dessert #glutenfree #easy
