🥒 Pickled Cucumber, Onion, and Bell Pepper Salad ⏱ Prep Time: 10 minutes 🔥 Pickling Time: 1 hour (or overnight for best flavor) 🍽 Servings: 2–3 🛒 Ingredients 🥒 Vegetables 1 large cucumber, thinly sliced ½ red onion, thinly sliced 1 red bell pepper, thinly sliced 1 yellow bell pepper, thinly sliced 🥣 Pickling Liquid ½ cup white vinegar or apple cider vinegar ¼ cup water 1 tablespoon sugar (or honey) 1 teaspoon salt ½ teaspoon black pepper 1 teaspoon mustard seeds (optional) ½ teaspoon red chili flakes (optional) 🌿 Optional Garnish Fresh dill or parsley, chopped 👩‍🍳 Instructions 🥣 In a small saucepan, combine vinegar, water, sugar, salt, pepper, mustard seeds, and chili flakes. Bring to a simmer for 1–2 minutes to dissolve sugar. Let cool slightly. 🥒 Place sliced cucumber, onion, and bell peppers in a glass or ceramic bowl. 🥄 Pour pickling liquid over the vegetables, ensuring they are fully submerged. 🕒 Let sit at room temperature for 1 hour, or refrigerate overnight for stronger flavor. 🌿 Garnish with fresh dill or parsley before serving. 💡 Tips Add sliced radishes or carrots for extra crunch Serve as a side with grilled meats, sandwiches, or Mediterranean bowls Store in an airtight container in the fridge for up to 1 week For a sweeter version, increase sugar to 2 tablespoons

EP 2/25 — Fermentation 101: Vinegar Pickling vs. Fermenting 🥒🧅 The key difference is the source of acidity. In vinegar pickling, veggies are soaked in a vinegar-based brine which creates all the flavor. The tangy taste comes from the vinegar, not a biological process. This method is quick and usually ready within a few hours or days, but it doesn’t create probiotics. Fermenting, on the other hand, preserves food through the activity of beneficial microbes. The veggies are submerged in a saltwater brine, and over the span of weeks, those microbes convert sugars into lactic acid — which is what gives fermented foods their tangy taste and probiotic benefits. No vinegar is needed — in fact vinegar would actually stop the fermentation. Perfect Snacking Pickles 🥒🥒 Ingredients: - 1lb cucumbers - 2 tablespoons pickling salt (or 3 tablespoons kosher salt) - 1 small white onion - Pinch of Dill - 5oz white vinegar - 4oz apple cider vinegar - 6oz sugar - 1 tsp whole mustard seeds - 1/2 tsp red pepper flakes - 1/2 tsp celery seeds - 1/4 tsp turmeric - 1/4 tsp allspice - Couple whole black pepper corns - 2 whole cloves What I did: 1. Slice cucumbers in 1/4 in rounds and toss with salt. Add to jar with minced dill and sliced onion. Transfer to a sterile mason jar. 2. Grab a small sauce pan and whisk together apple cider vinegar, white vinegar and sugar. 3. Add mustard seeds, red pepper flakes, celery seeds, tumeric, allspice, peppercorns and cloves. 4. Bring to a boil over medium heat and pour all contents into the jar. 5. Screw on lid and once cool place in fridge overnight and up to 10 days. Fermentation is a complex process and there is always risk of spoilage or undesirable outcomes. Follow safe food handling practices and ferment at your own risk. Glass Jars by @thebouqsco Gold Tongs @surlatable 2 cups of water 2 cups white vinegar 2 tspn salt 1-2 Tbsp of sugar (optional) Dissolve the above in boiling water and pour overcut vegetable vegetables.
