When lunch looks this good👇🏼🤭 Crunchy chickpeas, roasted sweet potato, quinoa, red onion, arugula, avocado & pomegranate on a bed of creamy tahini.. so colourful and delicious! Save this video and follow @tessbegg for more recipes 🌱 Serves 2 Chickpeas: 2 cups of canned chickpeas, drained and rinsed Drizzle of olive oil 1 tsp onion powder 1 tsp garlic powder 1 tsp smoked paprika Pinch of salt and pepper Sweet potato: 1 large sweet potato, peeled and diced Drizzle of olive oil Pinch of salt and pepper 1 tsp onion powder 2 tsp smoked paprika Arugula: 2 cups arugula (rocket) 1/2 lemon, juiced Other: 2 cups cooked quinoa 1/4 red onion, sliced 1/3 cup pomegranate Tahini dip (I used a ready-made dip) can sub for hummus 1 avocado, sliced Sesame seeds Pre-heat oven to 200°C. Line two trays with parchment paper. Add the sweet potato one tray and add the olive oil, salt, pepper, onion powder and paprika, then toss to coat. Add the chickpeas to the other tray and add the olive oil, salt, pepper, paprika and garlic/onion powder, and toss to coat. Place both trays in the oven (sweet potatoes on top rack) and bake for 35 minutes. In the meantime, add the arugula to a bowl along with the lemon juice and toss. When the potatoes and chickpeas are ready, add the tahini dip in the bottom of the bowls, then top with quinoa, arugula, sweet potato, chickpeas, red onion, avocado, pomegranate and sesame seeds. Just cut a block of tofu into 4 slices lengthwise, coat in cornstarch, let it cook in your waffle maker for 10 minutes while you whip up the yummy sauce, and enjoy your high protein savory snack! Spicy Cabbage Salad Follow us @littlericenoodles for more vegan Asian recipes We are resharing with you one of our top 3 popular recipes from this year🤗This is one of our favourite salads, it is for those hot days when we don’t feel like cooking but still want something full of flavors and meanwhile refreshing😋 You can transfer a whole head of cabbage into a big bowl of salad, simply slice it very thinly and season with a few ingredients😌 Ingredients cabbage 500g garlic 5 cloves chili flakes 2 tbsp soy sauce 5 tbsp dark Chinese vinegar 3 tbsp sesame oil 1 tbsp canola oil 4 tbsp Recipe 1.Slice the cabbage as thinly as possible(discard the stem part). Put it in a big bowl, chop the garlic finely and add it on top of the cabbage. Add chili flakes and sesame oil. 2.Heat up the canola oil over high heat until it’s very hot(about 180C or 356F), pour it over the garlic, add soy sauce and dark vinegar, mix everything well. Enjoy😋

Gera saciedade e nos nutre sem inflamar. 🌱O primeiro alimento do dia, determina como o dia todo será! ☕️Café da manhã: Overnight de aveia com chia: Ingredientes: ½ xícara de aveia em flocos 2 colheres de sopa de chia 4 morangos 1 banana 1 colher de sopa de castanha de caju 1 xícara de leite vegetal 👩‍🍳Preparo: Na noite anterior, amasse a banana e os morangos em um potinho, acrescente a aveia, a chia e o leite vegetal. Mexa bem, tampe e leve para geladeira. No dia seguinte finalize com morango picado, banana em rodelas e a castanha de caju. #plantbased #saude #receitasaudavel #nutrição

A true hall of fame sandwich for me x Ingredients (makes 2) 1 large/2 small ciabattas Rocket For the tofu: 200-300g firm tofu, thinly sliced 1.5 tbsp tamari 1/2 tsp paprika 1/2 tsp cumin 1/4 tsp ground coriander 1/4 tsp garlic granules 1/4 tsp cayenne 1/4 tsp oregano 1/4 tsp msg For the potatoes: 200g potatoes, sliced approx 1/2cm thick 1/4 tsp cumin 1/4 tsp oregano For the mayo: 4 tbsp mayo 1/4 lemon juice 1/2 garlic clove, minced 1/4 tsp oregano 1/8 tsp salt For the chermoula: Small handful coriander 1/2 garlic clove, minced 1/2 green chilli 1/4 lemon juice 2 tbsp olive oil 1/8 tsp salt Method 1. For the tofu: mix all the ingredients, apart from the tofu, together to make the marinade. Coat each tofu slice in the marinade then set aside to marinate for at least 30 minutes, the longer the better 2. Sprinkle the potatoes with the cumin, oregano & a pinch of salt then drizzle with oil & toss to coat 3. Lay the tofu slices & potatoes out flat on a lined baking tray then place in the oven at 200°C. Cook the tofu for 30-40 minutes until browned & slightly crisp, turning half way. Cook the potatoes for 15-20 minutes, turning half way, until tender & golden 4. For the chermoula: add all the ingredients to a food processor & pulse until it comes together but isn’t completely smooth 5. Mix all the mayo ingredients together & toast your bread 6. Assemble your sandwiches with garlic & herb mayo, rocket, tofu, potatoes & chermoula & enjoy! #sandwich #tofu #potatoes #easyrecipes #plantbased
