One of my favorite things to do as a recipe developer is to take simple plant-based ingredients and turn them into a big flavor meal that will wow your taste buds. These tacos featuring lentils, walnuts, mushrooms, spices, avocados, cabbage, and chili peppers do just that. The taco “meat” is rich and savory, and fries up into crispy-chewy perfection.
