It is forced rhubarb season in the Uk, and I couldn’t resist making my first rhubarb recipe! I tell you in the video how I prep it super easily, for it to keep its shape and colour ! RHUBARB UPSIDE DOWN CAKE 🍰 picked up some forced rhubarb from my local grocers @gladwellslondon and this was the very delicious very pink outcome x for a 7” cake~ 175g plain flour 40g almond flour @hollandandbarrett 3/4 tsp baking powder 1/4 tsp baking soda pinch of salt 1 egg @packingtonfreerange 80g coconut yoghurt @coconutcollab 80g coconut or arenga sugar 25ml maple syrup @buckwud_organic_maple 75g neutral oil 1 tsp vanilla @neilsenmasseyuk 100ml soy milk @plenishdrinks + 1 tbsp apple cider vinegar @willysacv 3 sticks rhubarb 1.5 tbsp (coconut) sugar @peaksupps rhubarb compote: 1/2 stick rhubarb 1 tbsp lemon juice 1 tbsp maple syrup handful raspberries (for colour) raspberry jam to brush 👩‍🍳preheat oven to 180c 👩‍🍳grease and line the cake tin with baking paper then sprinkle with a little sugar 👩‍🍳 slice your rhubarb to fit the base of the cake tin and set aside 👩‍🍳 for the cake batter: combine the milk and vinegar and leave for a few minutes to curdle 👩‍🍳 whisk in the sugar, yoghurt, oil, salt, vanilla, egg, and maple 👩‍🍳then add the ground almonds, flour and baking powder and soda 👩‍🍳add to the cake tin and bake for around 38-40mins until a toothpick inserted comes out clean 👩‍🍳 set aside to cool 👩‍🍳 make the compote by cooking a few raspberries, maple and lemon juice until bubbling. add in 1cm slices of rhubarb and simmer for a few mins. remove from heat 👩‍🍳 once cooled, tip the cake upsidedown and optional brush with heated seedless raspberry jam 👩‍🍳slice and serve with yoghurt and rhubarb compote . . . . #rhubarb #rhubarbcake #upsidedowncake #easybaking #homebaking

My dad’s RHUBARB CAKE - one of my dearest childhood memories and still my favorite cake up until this day.♥️ My dad is the baker in our family and he loves baking with the seasons...and whenever we enjoy his rhubarb cake I know that summer and soon lots of strawberry cake is right around the corner!☺️🍓 Ingredients: 500 g rhubarb 150 g sugar 150 g butter 1 pkt vanilla sugar (8 g) 3 eggs max. 275 g flour (depending on egg size) 3/4 pkt baking powder (12 g) Topping: 150-200g powdered sugar Method: 1. Clean (don’t peel) the rhubarb and cut into 1,5 cm thick pieces. 2. Place parchment paper on a baking sheet and place a baking frame, ⌀ = 28 cm. (Alternatively use a round baking time) 3. Mix room temperature butter, sugar and vanilla sugar until smooth. 4. Add the eggs and mix until well combined. 5. Mix 230 g flour and baking powder and slowly add to the bowl until well combined. If the eggs you use are large add some more flour. The batter should be spreadable, but not too thick. 6. Preheat the oven to 170*C. Evenly spread the batter in the baking tin. Top with the rhubarb pieces and gently press into the batter. Bake for 40-45 minutes. 7. Create a thick icing with the powdered sugar and a little bit of water. Evenly spread onto the warm cake. Save and share!!💞🐣 Rhubarb cake 2 cups rhubarb 1 tsp lemon juice 1 tbsp sugar of choice 1 cup gf flour 1 cup almond flour 1/4 cup oat flour 2 tsp baking powder 1/2 tsp baking soda 1/2 tsp fine salt 1 tsp cinnamon 1/2 cup coconut kefir 2 tbsp lemon juice 1/2 cup soy milk 1 tbsp vanilla 1/2 cup olive oil 2 flax eggs Scant 3/4 cup sugar Heaping 1/4 cup sliced almonds Preheat oven to 355 degrees. Place parchment on base of 8”springform pan and grease with coconut oil. Slice rhubarb and place in medium sized bowl and sprinkle with sugar and lemon. Mix and set aside. In a separate bowl whisk together kefir, lemon juice, milk and vanilla. Add oil and sugar and whisk again. Add wet to dry stirring until all flour mixture has been absorbed. Add in flax eggs. Stir to combine. Scrape batter into prepared pan. Tap pan several times to even out batter. Top batter with rhubarb lightly pressing the fruit into the batter. Place in oven for 25 minutes. GENTLY remove from oven, scatter with sliced almonds and bake again for another 30 minutes or until a toothpick comes out clean with a few crumbs.
