Rye bread is not a trend where I come from. It’s what we eat every day. What we grow up on. In Denmark, rye bread is as normal as pasta or rice is elsewhere. As my mormor (grandma) used to say: you have to eat rye bread before you get any white bread. Rugbrød is the foundation of smørrebrød – our open sandwiches layered with simple, thoughtful toppings. It’s filling, nourishing, slow, and deeply comforting. A bread that asks you to plan ahead, but gives back for days. This is the rye bread I always return to. It takes a little of time, but most is the waiting. Made with a sourdough starter that improves every time you bake. A dough you don’t knead, but stir. A bread that keeps well and tastes even better the day after. This recipe makes one large loaf (about 2 kg), perfect for slicing, storing, and building meals around – breakfast, lunch, and everything in between. Makes 1 a 2 kg loaf. 3-4 days before you first loaf This how your start up a rye bread sourdough starter. 1 portion of sourdough 140 g stoneground rye flour or coarsely ground rye flour (some countries it is called wholemeal rye flour) 170 g lukewarm water Take a glass jar of or a small mixing bowl, add water and rye flour mix with your hand, cover with a lit or tea towel, making sure air can enter. Let it sit on the kitchen counter for 3-4 days, or until it starts to become alive and smell a bit sweet and sour, that means it is fermenting and are ready to be used. - Rye bread recipe Rye bread dough is made over 2 days, and it is very easy, when you get the hang of it. Day 1 300 g whole rye 350 g boiling water Pre-dough 120 g grams rye sourdough (first time with the new sourdough starter used it all) 750 ml lukewarm water 500g stoneground rye flour 100 g plain wheat flour 100 g oats (whole flakes) Step 2 100 g sunflower seeds 50g linseed 50g sesame seeds The whole rye grain, from the day before 15 g salt REST OF THE RECIPE IN THE FIRST COMMENT

The Best Rye Bread Recipe – Healthy, Flavorful, and Easy to Make! I come from Ukraine, where bread holds a central place in our culture 🇺🇦🌾. It is deeply connected to many traditions, loved and cherished by all. We have numerous types of bread for every occasion and celebration, but rye bread holds a special place in our hearts. This type of bread has been a staple for our people for centuries, and we adore it! It has a unique flavor, aroma, and is incredibly nutritious. I’m excited to share my favorite rye bread recipe with you here 🫶🏻 🌾 For the Rye Starter (Sourdough): • 270 g rye starter (Note: I don’t keep rye starter regularly, so I used 30 g of my regular 100% hydration wheat starter, fed it with 120 g whole-grain rye flour and 120 g water, left it overnight at 22°C / 72°F. In about 10 hours, it was ready.) For the Dough: • All of the rye starter • 240 g whole-grain rye flour • 240 g rye flour (You can use one type of flour, but note that whole-grain flour absorbs more water.) • 300 g water • 150 g sunflower seeds / pumpkin seeds / flax seeds + 150 g boiling water (I used them in a 1:1:1 ratio for the soaker.) • 12 g salt • 30 g brown sugar or honey • 25 g barley malt extract (or 25 g dry rye malt + 25 g boiling water. You asked, so here‘s my seeded rye in all its glory. Probably the easiest bread you will ever make, as easy as a pound cake as you really just mix everything together, put it in a buttered tin, let is rise for a couple hours and bake it. 🤗 I didn‘t really scale the ingredients as with these kinda loaves I really just throw everything together, but those amounts should work. All flours/grains I used you can get @draxmuehle 🤗 Ingredients (adjust for your tin size) 400g type 1150 rye (a higher extracted rye flour, but you can use any even whole rye) 50g black rye (it‘s a very dark and highly active rye flour available in Germany, use whole rye if you don‘t have it) 150g rye starter (you can use at least 30% up to 50%) 400g water 10g salt Seed mix 150g seeds 100g crushed rye 250g water 50g root syrup (or date syrup) Process. I start with mixing water and starter and then add flour and salt and mix until combined. Then it rests for 30-60min and while I rest it I roast the seeds and then add syrup and water and cook until thick. If it‘s thick early on you can add more water. It then cools down a bit but is still warm when I add it to the dough. I fold it in until its all absorbed and sticky. I then butter my tin and add some raw seeds and use very wet hands to form a shape that fits the tin and punch out air and press it into the tin. With a scraper I smoothen the top and add more seeds and crushed rye grains. I then let it rise until the rim of the tin for about 3-5h and bake it 30min at 230°C and 30min at 200°C. I add a little bit boiling water on a hot pan in the beginning to create steam but don‘t add too much as its a very wet dough and it‘ll collapse if the steam lasts for too long. After baking let it rest overnight so it sets. Those 8-12h are important and will give the crumb more stability and have the bread last much longer! Do you love a good Rye bread? 🍞 🤎 If yes, then I have a delicious sourdough rye bread recipe you can try 👇🏻 But first, follow my page for all my sourdough tips, tricks & recipe shares @the.sourdough.girl And SAVE this reel so you can come back for this recipe when your ready 🤗 100 grams sourdough starter 350 grams water 300 grams rye flour (I used Anita’s Organic) 200 grams of AP flour (Five Roses) 15 grams honey 10 grams of salt Mix all the ingredients together until a shaggy dough (no I didn’t autolyse 🫣). I let it sit for 1 hour and then started a series of 6 stretch & folds 30 min apart. If your dough seems dense or dry in the beginning just wet your hands to help add a little moisture. Rye flour does not have as much gluten in it so it needs to be worked quite a bit to develop that gluten structure. Be gentle with your stretch and folds as it has a tendency to want to tear easier. Each stretch & fold you’ll notice the dough getting better and better. I bulk fermented for about 10+ hours. The dough was quite sticky after bulk fermentation for shaping so I used rice flour and my metal scrape to help shape this dough. Make sure to use rice flour in your banneton to prevent sticking (be generous). Cold proofed overnight (approximately 13hrs) Score & Bake in Dutch Oven with two ice cubes at 450 lid on for 25min and lid off for 20min. Voila! Seedy Rye Bread Recipe 🧸 My simple, d e l i c i o u s rye bread recipe! I’ve been baking (and eating) a couple of these every week! They’re so filling and delicious, PERFECT for sweet or savoury toppings! 🤎 Ingredients - ♡ 600g dark or light rye flour or a mixture ♡ 500ml water ♡ 12g salt ♡ 3g instant or dry yeast ♡ 3tsp herbs or spices of your choice (I didn’t use any for this one - cumin and coriander are great for a savoury loaf, or cinnamon for sweet!) ♡ 4 handfuls mixed seeds, or seeds of your choice ♡ 4-6 tbs molasses (it gives the most wonderful flavour to the bread! You could also use honey or malt for a sweet loaf) Method - ♥︎ Measure the water into a big bowl and add the yeast. Let it sit for 10 minutes to dissolve. 
 ♥︎ Add the flour and the salt and any of the other ingredients you are using. ♥︎ Stir together until it is well mixed.
 ♥︎ Grease a bread tin with coconut oil ♥︎ Flop the dough from your bowl into the tin. Don’t press it down. Touch as little as possible - it will move and fill the tin itself. 
 ♥︎ Optional - you can sprinkle some rye flour and seeds on the surface of the dough. Cover the tin with a tea towel or shower hat – raise the surface of it above the dough so that when the dough rises, it does not stick. ♥︎ Leave it for 2-5 hours – it depends on the heat in the kitchen. Don’t try to speed it up by placing it in an overly warm place as rye does not like to be too warm. Check it every once in a while. Rye is ready for the oven when there are little holes all over the surface. Keep your nerve and wait for that point. ♥︎ Heat the oven to 200 degrees C. Pop it in and bake for 45 minutes. Remove from oven and remove from tin. Let cool completely on a wire rack. Rye is best eaten the next day and will last for 4 - 5 days. You can also slice and freeze (I do) and it will last for months.
