KE5 tips for cooking scallops ⬇️

1. Choose dry packaged scallops versus wet packed. Wet packed are treated with a phosphate solution to make them appear more plump. This means when they are cooked they release this liquid and are more soggy than seared. Dry packed get a far better sear.
2. Season the scallops and then thoroughly dry with paper towels. Moisture is the enemy of pan searing.
3. Heat the pan and oil hot enough before adding scallops. Cold pan or oil = sticking.
4. Only get a sear on one side of the scallops. A hard sear on both will overcook them.
5. Once you are on the second side, decrease the heat and butter baste with herbs and garlic for great flavor.
Trust me, this method is fool proof! Try this and you will get the best scallops at home!
