NOHome Cooking Sessions: Dover Sole Meunière. A delicious French classic. Just a few ingredients and ready in 20. Full recipe below 👇🏽😍

1. Get some Dover sole. Ideally ask your fish monger to skin it (just easier), but if not, make an incision by the tail and pull the skin off on each side. Then trim off the lateral bones
2. Season with sea salt and black pepp on each side, then lightly dust in flour
3. In a pan, heat to medium high and add 4tbsp of neutral oil + 2tbsp of unsalted butter
4. Once fairly hot and foaming, lay down the Dover sole and don’t touch it for 3-4 mins - allow it to crisp up and cook on the one side
5. Carefully flip the fish (it shouldn’t stick if your pan was hot enough) and baste continually with the foaming butter ~3-4 mins
6. Remove the sole and let it rest, then to the same pan, add the juice of 1 lemon and 1tbsp of capers - stir vigorously to form a sauce then kill the heat and add 2tbsp of cold unsalted butter
7. Stir again until melted and sauce thickened
8. Debone the sole by pushing away the lateral bones, then slide the top fillets to the side, remove the bone like a zip, and plate up
9. Spoon over your delicious pan sauce and top with parsley

This is such a beast of a dish. I prefer to add parsley after rather than during the sauce making as I find it goes brown too quickly. The fish is gelatinous and soft, buttery, lemony and acidic. So delicious #notoriousfoodie 🙅🏽♂️
