SISink your teeth into the ultimate afternoon delight! These copycat mid-day squares are a peanut butter-chocolate dream come true. Made with real food ingredients, they’re a copycat recipe you won’t want to miss! Plus, they’re gluten-free, and refined sugar-free.
INGREDIENTS
* 1/2 cup cashews
* 1/2 cup Medjool dates (pitted)
* 1/2 cup Peanut Butter
* 2 Scoops Protein Powder or collagen powder
* 1 tsp Vanilla Extract
* Pinch of Sea Salt
* 1/2 cup Hu Gems
* 1/4 tsp Coconut OIl
* Flakey Sea Salt
INSTRUCTIONS
1. Pre-heat your oven to 325 degrees
2. Add the cashews, dates, and peanut butter into your food processor and pulse until the mixture looks like coarse sand.
3. Next add your protein powder, vanilla extract, and pinch of salt and pulse again until combined.
4. Place the mixture in a 9x9 baking dish lined with parchment paper, and firmly press the peanut butter mixture down.
5. Place the pan with the peanut butter mixture in the oven and bake for 8-10 minutes. The edges should be just starting to turn golden.
6. Over a double boiler melt your chocolate and coconut oil together.
7. Pour the melted chocolate over the peanut butter mixture and top with flakey sea salt.
8. Place in the freezer for 1-2 hours so the chocolate can set.
9. Cut into squares and enjoy!
