Strawberry Shortcake, Bakery Style! This is how I learned to make a strawberry shortcake back at my highschool bakery job. My top 3 tips 🍓 1. Use an oil based cake recipe. Because we’re filling this cake with whipped cream, it’ll need to be refrigerated. A butter based cake would get hard/dry in the fridge- so oil based cake is the way to go. 2. Use a stabilized whipped cream so that the leftovers hold up well in the fridge. I like cream cheese or mascarpone whipped cream, but gelatin is also a great stabilizer. 3. If the strawberries are ripe and sweet, use them as is. I tend to steer clear of macerating strawberries for a shortcake because it can cause them to give off too much liquid as the cake sits. But if you prefer a sweeter, saucier berry, then you can sprinkle the sliced strawberries with a few teaspoons of sugar, toss, and let them sit before using them between the cake layers. #shortcake #strawberryshortcake #strawberry #summerbaking #chantillycake

On a lined baking sheet, layer each cookie starting with: • 1 graham cracker • A square or two of chocolate • 1 marshmallow Take a scoop of Toll House cookie dough and gently flatten it over the top, sealing in the s’mores layers like a cookie lid. Bake for 12–15 minutes, until the cookie tops are golden brown. Let cool slightly (if you can wait) and enjoy the gooey goodness!

MAINE MEAL: We only get about a month to enjoy late summer’s wild blueberry season - Maine produces about 95% of these low-bush blueberries, which are smaller, sweeter, and more concentrated in flavor than their cultivated counterparts. When I spotted the first pints in late July, I snatched them up, knowing I had to make @dutchsportland’s Wild Maine Blueberry Muffins! Dutch’s is just a couple blocks from our apartment and one of our favorite breakfast spots in Portland. While you can’t go wrong with anything on the menu, the baked goods are always 🔥. And they are not shy about packing in as many blueberries as possible. I made a half batch (which still yields about 20 muffins) and used 4 cups of wild Maine blueberries! Just chuck it in the fridge and it’s ready to serve the next day 🫶 All you need is: Lemon cream: 350ml cold double cream 50g icing sugar 1 tbsp lemon juice Zest from 1 lemon Lemon syrup: 20g icing sugar 60ml lemon juice (4 tbsp/approx 2 lemons) Filling: 26 sponge fingers 320g lemon curd (I used Tesco finest) Optional decoration: Sliced lemons Fresh mint Dish size: 7x11” (or something of a similar volume) Enjoy! #fitwaffle #fitwafflekitchen #lemon #tiramisu #easyrecipes #summerbaking

Here’s how to make them: 🍑 Peach Filling: 1 15oz can peaches 1 tbsp cornstarch Simmer until thickened, about 5–10 mins on medium heat. 🍰 Cookie Dough: 1 pkg Classic Yellow Cake Mix ½ cup oil 2 eggs Preheat oven to 350°F. Mix cookie dough ingredients together, scoop into ¼ cup rounds, and place on parchment-lined sheet pans. Press a small indentation in each and fill with peach mixture. Bake 10–12 mins until golden on the edges. Cool for 15 mins on the pan. Glaze: ½ cup powdered sugar 1 tsp vanilla extract A splash of milk Stir until smooth, drizzle over cooled cookies, and try not to eat three in one sitting. Sweet tropical vibes = Sunday baking 💛🍍 INGREDIENTS, makes about 12 slices For 🍍 compote • 2 cups crushed pineapple, drained • ⅓ cup granulated sugar • 1 ½ tbsp cornstarch • 1 tbsp pineapple juice • 1 tbsp rum, optional • ½ tsp cinnamon  For batter • 3 cups all-purpose flour • 1 tbsp baking powder • ½ tsp baking soda • ¾ tsp salt • 1 cup unsalted butter, softened • 2 cups brown sugar, packed • 4 large eggs • ½ cup full-fat coconut milk • ¾ cup pineapple juice (fresh or canned) • Zest of 1 lime For frosting • 1 ¼ cups butter, softened • 10 oz cream cheese, softened • 4 - 5 cups powdered sugar • 3 - 4 tbsp lime juice • 1 tbsp coconut milk • Pinch of salt For garnish • Pineapple • Coconut flakes, toasted DIRECTIONS Make the 🍍 Compote 1. In a saucepan, combine pineapple, sugar, cornstarch, juice, cinnamon, and optional rum. 2. Cook over medium heat, stirring often, until thickened (5–7 min). 3. Mash slightly and let cool. Bake Cakes 1. Preheat oven to 350°F. Grease and line two 9” pans. 2. Whisk flour, baking powder, baking soda, and salt. 3. Cream butter and sugar until fluffy. Add eggs one at a time. 4. Mix in coconut milk, pineapple juice, and lime zest. 5. Gradually mix in dry ingredients until just combined. 6. Divide batter into pans and bake 30–40 min, until a toothpick comes out clean. 7. Cool 10 min, then transfer to racks. Once cool, chill 30 min, then slice each cake into two layers (4 total). Make Frosting 1. Beat butter and cream cheese until smooth. 2. Add powdered sugar in batches until fluffy. Stir in lime juice, coconut milk, and a pinch of salt. 3. Chill 15–20 min before using. Assemble Cake 1. Place first layer on a stand. Pipe a frosting ring, then add ½ of the pineapple compote inside.
2. Add second layer, spread with frosting.
3. Add third layer, pipe a ring, and fill with remaining compote. 4. Place fourth layer on top. Apply a crumb coat, chill briefly, then frost the entire cake.
5. Decorate with remaining frosting, pineapple, coconut flakes, and lime zest. We like to press coconut flakes onto the sides.
 To make cupcakes, bake at 350°F for 18 – 22 min. Yields 24 – 48 cupcakes. FULL recipe also available on our website.
