I swear Japanese curry is like spaghetti equivalent in Korean / Japanese household 🤣 you can’t ever go wrong with it and my kids LOVE it with udon noodles! See below for my curry udon recipe or comment “RECIPE” to have it sent to you! CURRY UDON WITH BEEF BRISKET Serving size: 2 adults + 2 kids + leftovers Ingredients: 1 onion, thinly sliced 2 green onions, chopped 2 tbsp oil (I used avocado oil) 10-12 oz of sliced meat (I used Costco shabu shabu meat) 2 tbsp of mirin 6 cups of dashi stock or water 4 cubes of Japanese curry 3 tsp of soy sauce Directions: 1. Preheat a medium pot over medium heat. When the pot is hot, add 1 tbsp of oil of your choice and add the onion slices. 2. Sauté the onion slices for 2-3 minutes. Then, add carrots (optional) and saute for another 2 minutes. Next, add your sliced meat. 3. Cook the meat for a minute or until it’s barely pink. Add 2 tbsp of sake or mirin. 4. Add your dashi stock to the pot and cover with lid. Reduce the heat to medium low and cook for 5 minutes. If needed, skim off the scum with a fine-mesh skimmer and continue to cook. 5. Cook your udon noodles as per packaging directions. If you bought the frozen kind, they only need to be blanched in boiling water for a max of 1 minute for chewy texture. 6. Dissolve the curry cubes completely in the ladle before adding to the soup. 7. Add 2 tsp soy sauce and mix it in well. Turn off the heat and cover with the lid to keep it warm. 8. Drain the noodles. Pour the curry soup over the udon noodles. Top with the green onions and enjoy!

Chilli Peanut Udon w/ Charred Sesame Broccoli Serves 2 Ingredients For the chilli peanut sauce 1 tbsp crispy chilli oil, solids only (I use Lao Gan Ma or White Masu) 1 tbsp peanut butter 1 tbsp miso 1 tbsp mirin 1 tbsp soy sauce 2 tsp rice wine vinegar (apple cider or white vinegar) Water to loosen For the broccoli 3 tbsp sesame seeds 1 bunch tenderstem broccoli, trimmed and halved or quartered lengthwise 1 tbsp oil 2 tsp soy sauce 2 tsp rice wine vinegar (apple cider or white vinegar) 2 tsp sesame oil 2 tbsp sesame seeds For the rest 2 portions of protein of choice, optional - I used baked tofu 2 portions udon noodles 2 soft boiled or fried eggs, optional - omit for 100% plant-based recipe Spring onions, finely sliced Method Toast the sesame seeds | Heat a wide frying pan over medium heat | Add the sesame seeds and toast until deeply golden and aromatic | Tip out and reserve Char the broccoli | Return the pan to the heat and increase to a high heat | Add the oil and broccoli with a pinch of salt | Leave still until well charred then stir and toss and repeat until more charred and and just tender | Remove the broccoli and add to a bowl, or to save on washing simply allow the pan to cool | Add the soy sauce, vinegar, sesame oil and toasted sesame seeds and stir to combine | Taste and season with salt if needed Make the sauce | Whisk together the chilli oil (solids), peanut butter, miso, mirin, soy sauce and vinegar until smooth | Loosen with a spoon of hot noodle or tap water if needed Cook the noodles | Cook the udon in well-salted boiling water until just tender | Drain, reserving a little cooking water Bring together | Add the hot noodles to the sauce | Toss to coat, loosening with more water if needed | Divide between bowls and top with the charred broccoli and your protein of choice

Tonight’s dinner: kimchi udon stir fry! 🌶️🍜 One of my favorite meals for its low effort to taste ratio 🙂‍↕️ Here is how I made it 👇🏼 1 serving thinly sliced pork belly of collar (around 8 slices for me) 1 packet udon noodles 130 g or 2/3 cup kimchi, chopped 50 ml water 1/2 green onion (optional) 1 tsp minced garlic 1/2 tbsp sugar 1/2 tbsp soy sauce 1 tsp gochugaru for extra spice - stir fry pork, green onions, and garlic together until slightly cooked - in the meantime, cook udon noodles according to package directions - add kimchi, sugar, soy sauce, gochugaru, and cook until the kimchi is cooked through - add water and udon noodles - stir fry until the sauce thickens and the noodles are well coated #koreanfood #weeknightmeals #easyrecipe #dinneridea #9to5life

MAPO TOFU UDON 🍜 I’ve been seeing these viral noodles EVERYWHERE and I’m not gonna lie I was a bit skeptical… 🤨 So I made this vegan version and I have to admit, they’re really that good (and made in no time!)😋 RECIPE (1 serving, 15min prep time) -150g silken tofu -a pinch of salt Blend until creamy. -100g tofu or cooked soy chunks Fry in some oil until browned. -1/2 Tbsp gochujang -2 Tsp soy sauce -2 Tsp vinegar -salt to taste Add to the tofu and stir fry for a few more minutes. -1 pack udon noodles Cook according to the package instructions. -scallion and chili oil to serve Assemble everything in a bowl and enjoy! - MAPO TOFU UDON 🍜�Ich habe diese viralen Nudeln ÜBERALL gesehen und ich lüge nicht, ich war erst ein bisschen skeptisch… 🤨�Also habe ich diese vegane Version gemacht und muss zugeben: sie sind wirklich schmackofatz (und super schnell gemacht!)😋 REZEPT (1 Portion, 15 Min. 50 30 | S2 EP. 12 MAPO TOFU UDON 💪 We had to do it and they were awesome. 53 Protein | 664 Calories | 21 Fat | 62 Carbs INGREDIENTS FOR 2 300g Lean Beef Mince 1 tbsp Black Bean & Garlic Paste 1 tsp Sichuan Peppercorns 1 tsp MSG 1 tsp Sugar 330g Silken Tofu 1 tbsp Tahini 1 tbsp Soy Sauce 1 tsp Sesame Oil 1 Garlic Clove, Grated 2 tbsp Shaoxing Wine 1 Cucumber 2 Spring Onions 400g Frozen Udon Method To make the sauce, add the silken tofu, tahini, soy sauce, sesame oil and garlic to a blender. Pulse until smooth but don’t overblend as it’ll go quite runny. Set aside. Using a pestle & mortar, grind the sichuan peppercorns with the msg and sugar until you have a coarse powder. Separate the whites and greens of the spring onions. Finely slice the whites into rounds and julienne the greens. Slice the cucumber into thin rounds, stack them up into little piles and cut into strips. Mix the cucumbers and spring onion greens. Add the beef to a hot pan over a medium heat to get some colour, before breaking up. Once coloured, add in the seasonings and cook for a few more minutes. Deglaze with the shaoxing wine. Cook the noodles and plate up. Noodles on the bottom, pour over the sauce, beef on one side, salad on the other. Finish with chilli oil. #5030 #mapotofu #viralrecipe

Easy 15min Viral Cream Udon Carbonara #carbonara #udon #creampasta #easyrecipe Recipe 1. Cut pork belly into thick chucks and cook on medium high heat starting from a cold pan. Cook until fat is nice and rendered, and crispy 2. Using a kitchen towel, soak up some of the grease so it’s not overly oily 3. Cook udon slightly under package instructions, and transfer into pork fat. 4. Add heavy cream (~150g), dashi powder (~2g), black pepper, grated parm (~30g), 20g butter and ladle of pasta water to help emulsify (can add more or less to adjust for consistency). Taste for salt. Honestly this recipe has a lot of room for error, it’ll just come out tasty. 5. Plate, garnish with an extra yolk, more parm and a small knob of butter
