DOMalheureusement, je n’ai rencontré @camille.delcroixoff
qu’une seule fois… Je dis malheureusement parce que j’avais beaucoup aimé cette rencontre avec un chef attentif, ouvert et talentueux — ça change de… enfin d’autres… Et quand j’ai vu qu’il s’intéressait et proposait quelques recettes avec un de mes fromages du Nord préférés, le @maroilles_aop , j’ai bien sûr senti mon sourcil se lever !
En plus, il a eu la bonne idée de l’utiliser pour proposer un welsh au Maroilles AOP, dont je vous propose aujourd’hui une version à peine différente de la sienne.
Welsh welsh welsh au Maroilles AOP ( à 2 c'est mieux pour en venir à bout... )
Les courses :
240 g de Maroilles AOP – 2 tranches très fines de jambon fumé – 18 cl de bière pas trop amère (j’ai suivi ses conseils et j’ai pris de la Goudale) – 1 belle tranche de pain de seigle – 2 càs de moutarde forte – quelques splash de Worcestershire sauce – 1 œuf – du beurre demi-sel – poivre
La cuisine :
Faites dorer le pain très légèrement beurré dans une poêle à feu assez vif.
Déposez-le dans un caquelon où il ne se sentira pas trop à l’aise, puis arrosez-le avec 3 cl de bière.
Tartinez avec 1 càs de moutarde, puis déposez les tranches de jambon pliées en deux.
Chauffez les 15 cl de bière restants avec quelques traits de Worcestershire sauce à feu assez doux dans une casserole. Une fois le mélange chaud, ajoutez peu à peu le Maroilles coupé en morceaux en remuant régulièrement. Laissez fondre, puis continuez de mélanger jusqu’à obtenir la consistance souhaitée. Le mien est bien onctueux, mais pas assez épais — ça aurait pu être un poil plus. Faites réduire un peu si nécessaire.
Ajoutez la càs de moutarde restante et mélangez bien.
Versez sur le jambon et faites dorer sous un gril bien chaud.
Pendant ce temps, faites cuire un œuf au plat. Moi, c’est dans un fond d’eau, à feu assez doux, à couvert… après, à vous de voir.
On pose l’œuf sur le welsh, on poivre… et il n’y a plus qu’à regarder quand Lens joue à domicile…
