WHOLE WHEAT BREAD THAT’S ACTUALLY SOFT & DELICIOUS?! yeah…. sign me up🤝 I’m really proud of this one ya’ll!! I got so many requests for a whole wheat bread that even your kids will want to eat and trust me, THIS IS THE ONE. Subtly sweet, super soft and pillowy with all the nutrients and fiber that 100% whole wheat has to offer🫡 Make this ASAP and let me know what breads you want to learn how to make next! RECIPE TANGZHONG: 35 g (1/4 cup) whole wheat flour
175 g (¾ cup) whole milk DOUGH: 465 g (3¾–4 cups) whole wheat flour
All of the cooled tangzhong
240 g (1 cup) whole milk, lukewarm
75 g (¼ cup) honey
50 g (¼ cup) unsalted butter, very soft
9 g (1½ tsp) salt
7 g (2¼ tsp) instant yeast
2–3 g (½ tsp) apple cider vinegar Make your tangzhong by combining the whole wheat flour and milk together and cooking over a medium heat until a thick paste (like mashed potatoes!) forms. Pull off the heat and set aside to cool. In a bowl or a mixer, combine your flour, milk, honey, yeast, ACV, and cooled tangzhong. Mix till just barely combined then add in your soft butter and mix till fully incorporated. Cover and set aside for 20 minutes to relax. Then add your salt and mix for 8-10 min in your mixture or 12-15 min by hand till the gluten has fully developed and your dough passes a light window pane test. Place in a greased bowl and set aside to proof for 60-90 min till doubled in size. Once finished proofing, roll into a tight log and optionally roll into old fashioned oats. Place seam side down into a 8.5x4.5 bread pan and proof for 30-40 more minutes till the bread is up over the edge of you pan. Bake at 350F for 35-40 minutes. Let cool on a wire rack with a towel over it to trap some steam and keep the crust from drying out. Cool COMPLETELY before cutting or your bread will be gummy and weird! Thank you 🥖 Ingredients • 3 cups whole wheat flour • 2 tsp active dry yeast , ( if using instant yeast , no need to activate for 15 minutes , can directly add to the Flour . Just keep the total liquid 1.5 cup + 1 or 2 tbsp) • 1½ tbsp sugar • 1 tsp salt • 1¼ cups warm milk + 1,2 tbsp (add gradually) • 2 tbsp oil + 1 tbsp while kneading( any neutral oil) • 1/4 cup warm water (for activating yeast) Optional: pumpkin seeds / sesame / hemp seeds Method 1️⃣ In 1/4 cup warm water, mix sugar and yeast. Let it rest 10–15 minutes until frothy 2️⃣ In a big bowl, mix yeast mixture, 1 cup warm milk, and oil. 3️⃣ In another bowl, combine whole wheat flour and salt. 4️⃣ Gradually add liquid mixture to flour and mix well . Add extra 1/4 cup warm milk slowly . 5️⃣ Knead for 10–12 minutes by applying oil on hands until smooth and elastic. Add 1-2 tbsp milk if dough feels dry. 6️⃣ Cover and let rise in a warm place until doubled (about 60–90 minutes). 7️⃣ Punch down, remove air bubbles, roll tightly, and place in greased loaf pan. 8️⃣ Second proof 45–60 minutes only (do not overproof). 9️⃣ Bake at 180°C / 350°F for 35-0 minutes until top is golden. After baking brush the bread with some butter , cover and rest . 🔟 Cool completely for 3-4 hours before slicing. 💡 Important Tip ✔ Do not overproof – Whole wheat dough rises faster in a warm oven. promised here is the recipe for homemade 100% Atta Bread💁🏻‍♂️Super simple to make, this wholesome recipe is just what you need this winter season to pair with your favourite soups, spreads, or a warm cup of chai ☺️ Ingredients ✨1 + 1/2 cup whole wheat flour (atta) ✨1 tsp instant yeast ✨1 tbsp sugar ✨1/4 tsp salt ✨3/4 cup water, warm ✨2 tbsp milk, warm ✨1 tbsp (14g) butter Method 1. Add flour, yeast, sugar, salt In a bowl and give it a quick whisk. 2. Now add In water and milk and mix again using a wooden spoon to form a rough dough. 3. Knead the dough by hand on a clean, lightly floured surface for 10-12 minutes. 4. ⁠Lastly add in the butter and knead the dough again for 1-2 minutes till the butter is properly incorporated in the dough. 5. ⁠To check if the dough is ready to proof, take small piece of dough and gently stretch it between your fingers . If the dough can be stretched thin enough and light passes through it , it means the dough is ready and it has passed the windowpane test. 6. Once the dough is ready , transfer it in a bowl greased with oil. Cover the bowl with a cloth and let it proof for 1 hour or till doubled in volume. 7. Knock down the dough after the first proofing. 8. Roll out the dough into a rough rectangle . Then start shaping the dough to form a log. Make sure to pinch and lock the dough after every turn. 9. Transfer this log in a greased 7X4 inch loaf pan and cover again for second proofing. Let it proof for another 30 mins or till doubled in volume. 10. ⁠Preheat the oven at 190 degrees Celsius. 11. 🌱Whole Wheat Bread For the sponge: 230gm Water 90gm Plant Milk(I used Soy) 5gm of Yeast(i used instant) 60gm Jaggery 250gm Whole Wheat Flour To be added later: 1tsp Salt 50gm Seed Oil( I used Sunflower) 2tsp Lemon Juice 180gm Whole Wheat Flour Method 🌱Mix all the ingredients of the sponge in a bowl, no dry flour around. 🌱Cover and keep aside till doubled, took me 50mins. 🌱Add salt, oil, lemon juice & rest of the flour. Bring it all together. 🌱On a platform, begin kneading, using the stretching technique and rotating the dough while you do this.It will become stronger and more pliable. 🌱I like resting the dough after 5mins, and kneading it again. 🌱Would take 15mins of kneading and resting, till it doesn’t tear easily anymore. 🌱If you have a stand mixer, you could knead on low for 5-7mins. With a dough hook. 🌱If you are using a stand mixer, stop for 2mins in between and knead again. 🌱In both cases, may feel sticky , dont get tempted to add more flour unless too sticky. 🌱Make a ball, place in a greased oil bowl covered till doubled. Took me 60mins. 🌱Punch out the air gently. 🌱Roll a square or a rectangle according to the size of the pan, which is an inch smaller in width. 🌱Roll the square/rectangle into a log.
