🌍 Around the World – Episode 12 🇧🇦 This time the journey takes us to Bosnia & Herzegovina 🇧🇦 Ćevapi with Lepinja and Ajvar Ćevapi (Balkan grilled sausages) Ingredients • 500 g ground beef • 500 g ground lamb • 4 cloves garlic, minced 2 whole white onion • 1tbs salt, 1 whole egg • 1tbsp paprika • ½ tsp black pepper • ½ tsp baking soda • 60 ml sparkling water Method 1. In a bowl combine the ground beef and lamb. 2. Add garlic, salt, paprika, and black pepper. 3. Dissolve the baking soda in the sparkling water, then pour it into the meat mixture. 4. Mix thoroughly until the mixture becomes slightly sticky and well combined. 5. Cover and rest in the fridge for at least 1–2 hours (overnight is even better). 6. Shape into small sausage shapes about 6–8 cm long. 7. Grill on a hot grill or pan for 6–8 minutes, turning until nicely charred and cooked through. ⸻ Lepinja (Balkan Flatbread) Ingredients • 500 g flour • 7 g instant yeast • 1 tsp sugar • 1 tsp salt • 300 ml warm water • 2 tbsp olive oil Method 1. Mix yeast, sugar, and warm water and let sit for 5 minutes. 2. Add flour, salt, and olive oil. 3. Knead until a soft dough forms. 4. Cover and let rise 1 hour until doubled. 5. Divide into round balls and flatten slightly. 6. Rest another 20 minutes. 7. Bake in a very hot oven 250°C for 7–10 minutes until puffed and lightly golden. ⸻ Ajvar (Roasted Pepper Spread) Ingredients • 4 red bell / 2 point red peppers • 1 eggplant • 2 cloves garlic • 2 tbsp olive oil • 1 tsp vinegar • Salt to taste Method 1. Roast the peppers and eggplant at 220°C until charred and soft. 2. Peel off the skins and remove seeds from peppers. 3. Blend with garlic, olive oil, vinegar, and salt. 4. Ćevapi are deeply traditional from the region I come from. They’re the kind of food you eat standing up, straight off the grill, wrapped in bread, with onion on your fingers and smoke in your hair. Everyone has their own version, and everyone swears theirs is the right one. This recipe comes from my friends in Bosnia. When it comes to meat, you can really use any mix you like, but fat is essential — cevapi need it. If you go too lean, they’ll be dry. Ingredients (for 1 kg of ćevapi) • 700 g beef mince (with some fat) • 300 g lamb mince (with some fat) • 4 garlic cloves • 1 tbsp paprika • 1 tbsp freshly ground black pepper • 14 g salt (about 2¼ tsp fine salt) • 100–150 ml sparkling water • Pinch of bicarb soda (optional but recommended) Method Finely chop the garlic and place it in a small saucepan with about 100 ml water. Bring to the boil and simmer for 5 minutes, then let it cool completely. This step softens the garlic so it doesn’t overpower the meat — the flavour is still there, just more gentle and balanced. In a bowl, combine the beef and lamb. Add paprika, black pepper and salt. Pour in the cooled garlic along with its cooking water, then add the sparkling water and a small pinch of bicarb soda. Mix everything very well until the mixture becomes sticky and cohesive. Ideally, cover and rest it in the fridge overnight. If you’re short on time, at least 2 hours will do. Shape the ćevapi however you like — I shape them the way you see in the video because it’s quickest and easiest for me. Heat a barbecue or a heavy pan until very hot and cook the ćevapi on high heat until deeply golden and cooked through. To serve I love them with kajmak, finely chopped onion and ajvar. And don’t forget — soak up all those cooking juices with the bread. This is not negotiable 🥰

Rest (IMPORTANT) Cover the meat tightly and refrigerate for 24 hours. This rest allows the seasoning to fully penetrate, improves binding, and creates the signature ćevapi texture. 3. Shape After resting, divide the mixture and roll into small, finger-length cylinders, about the thickness of a thumb. 4. Grill Heat a flat grill or griddle over medium-high heat. Grill the ćevapi, turning occasionally, until evenly browned and cooked through. 5. Assemble • Place hot ćevapi into warm lepinja bread • Add ajvar • Add kaymak • Top with raw onions 6.
