Day 1 | 30 days of 30 minute dinners 😋 Welcome to my new series! I can’t wait to start sharing some easy, quick and DELICIOUS dinners you’ll make time and time again. We’re starting off strong with these heavenly skewers 🤤 Enjoy! Chris x GARLIC PARMESAN CHICKEN SKEWERS | Serves 4 INGREDIENTS ➡️CHICKEN: 640g / 1.4lb boneless skinless Chicken Thighs 1 tbsp Olive Oil 1 tsp Paprika 3/4 tsp EACH: Garlic Powder, Salt 1/2 tsp Black Pepper 1/4 tsp EACH: Onion Powder, Cayenne Pepper (reduce if you really don’t like spice - it’s very subtle though) ➡️BUTTER: 75g / 5 tbsp Unsalted Butter, softened 20g / 1/4 cup freshly grated Parmesan 3 cloves of Garlic, finely grated/minced 1 tbsp very finely diced Fresh Parsley 1/4 tsp EACH Salt, Black Pepper, or to taste METHOD 1️⃣Slice the chicken thighs into bite-sized pieces then combine in a bowl with the oil and seasoning. Thread onto 4x 20cm/8” skewers, ensuring you leave a gap at both ends. Make sure the pieces are nice and compact so they stay nice and juicy. Place in the air fryer and cook at 200C/400F for 10 minutes. 2️⃣Meanwhile, combine the butter with parmesan, garlic, parsley, salt and pepper. You want the butter to be soft enough to brush, but not completely melted. A little creamy if you will. Pop in the microwave for 5 second blasts until you reach this consistency. 3️⃣After 10 minutes, flip the skewers (I find this easiest with a pair of tongs) and brush with 1/3 of the butter. Air fry for 2 minutes and 30 seconds, then flip them and brush with another 1/3 of the butter. Air fry again for another 2 minutes and 30 seconds, or until lightly charred on the outside and piping hot right through the centre (timings may depend on size of chicken pieces - safe internal temp for chicken is 165F/74C). 4️⃣Remove the skewers and brush with the remainder of the butter. Sprinkle over more parmesan & parsley whilst they’re still hot if desired. *The chicken isn’t far off being cooked after 10 minutes and the outside is piping hot, so I just use the same brush/butter throughout. If you’re at all wary just save 1/3 of the butter for the end baste and use a different brush (or clean the first one).

This is one of those meals you’ll keep on repeat, my family happy meal🥰 For any links of products used in this video, comment “links” and I’ll send them into your messages✨ Ingredients🐓🧅🍝 One pot chicken & pasta Just over 1 pound boneless skinless chicken thighs 1 onion, sliced ¼ cup olive oil 1 teaspoon salt 1 teaspoon paprika 1 teaspoon garlic powder ½ teaspoon black pepper 1 package 12 oz 340 g cut fideo pasta 4 cups chicken broth or any broth you love Side salad 🥬🥒🌽 1 head romaine lettuce 4 Persian cucumbers, chopped 1 can sweet corn, drained Olive oil Fresh lemon juice Salt and pepper Instructions Place the chicken thighs in a bowl. Drizzle with olive oil, add salt, paprika, garlic powder, and black pepper. Mix until evenly coated. Heat a large pot over medium heat. Add the chicken and sear for a few minutes on each side until golden. As the chicken cooks, scatter the sliced onion right on top and let it soften in the juices. Once the chicken is nicely browned, sprinkle the fideo pasta directly over the chicken. Pour in the broth and bring to a boil. Cover, reduce to a simmer, and cook for about 10 minutes until the pasta is tender and the chicken is cooked through. While it simmers, chop the lettuce and cucumbers, add the corn, drizzle with olive oil and lemon juice, season with salt and pepper, and toss. That’s it. One pot. One fresh salad. Here’s the recipe details…👇 Welcome to EP.28 of Bare Minimum Meals 😮‍💨🍝 Bare Minimum Spinach Artichoke Chicken Pasta 🥬 👉 Comment “BMM” for a week’s worth of my most popular low effort recipes — 🥣 Ingredients: • 4 cups cooked Barilla Protein pasta (480 g) • 1 cup frozen spinach, drained (120 g) • 1 cup chopped artichoke hearts (120 g) • 1 cup nonfat Greek yogurt (245 g) • 3 tbsp low-fat cream cheese (45 g) • 1 cup low-fat shredded Parmesan (80 g) • 1 cup low-fat shredded mozzarella (112 g) • ½ rotisserie chicken, shredded (345 g) • ½ cup water • Garlic powder, paprika, onion powder, and pepper to taste — 👨‍🍳 Instructions: 1️⃣ Cook the protein pasta and drain. 2️⃣ In an oven-safe dish, add the cooked pasta, spinach, artichokes, Greek yogurt, cream cheese, Parmesan, mozzarella, chicken, and seasonings. 3️⃣ Pour in ½ cup of water and mix everything together well. 4️⃣ Top with a little extra shredded cheese. 5️⃣ Bake at 400°F for 15–20 minutes until hot and melty. 6️⃣ Serve and enjoy! — 📊 Nutrition (per serving – 4 servings): • Calories: ~575 kcal • Protein: ~50 g — 💡 Pro Tip: You can swap the rotisserie chicken for any other lean protein source (adjust ingredients as needed to make it your own)

Dumb Dinners, Episode 23: Lazy Meatball Lasagna What you’ll need: 1 jar marinara sauce (24–25 oz) 1¼ cups water 8–10 oven-ready lasagna noodles, broken into pieces 1 cup whole milk ricotta 2 cups shredded whole milk mozzarella, divided 20–25 frozen fully cooked meatballs (½ oz) 1 cup frozen chopped spinach 1 tsp Italian seasoning ½ tsp garlic powder Pinch of salt How to make it: Mix marinara, water, ricotta, and seasonings in a 9x13 dish Add broken noodles, frozen meatballs, spinach, and half the mozzarella Stir everything together and press noodles down into the sauce Top with remaining mozzarella, cover tightly with foil Bake at 375°F covered 45–50 min, uncovered 10–15 min Rest 10 min before scooping Dinner so easy it’s kinda dumb. 🤌 #easymeals #dinneridea #easydinners #easyrecipes #easyrecipie

If you’re new here, hi—I’m Sara, a mom of two who does not love cooking, but does love feeding her family without overthinking it. These are the kinds of dinners that save my sanity on busy nights. What you’ll need: • 1 can (16 oz) buttermilk biscuits, quartered • 14–15 oz pizza sauce • 2 cups shredded mozzarella • 15–20 pepperoni slices • 1–2 tsp Italian seasoning How to make it: Preheat oven to 350°F and lightly grease a 9×13 baking dish. Quarter the biscuits and spread the pieces evenly in the dish. Pour the pizza sauce over the biscuit pieces and gently spread to coat. Sprinkle Italian seasoning across the top. Add mozzarella cheese. Add pepperoni (or any toppings you like). Bake 25–35 minutes, checking the center. If the middle biscuits still look doughy, bake an extra 5–10 minutes until everything is puffed and cooked through. Let rest for 5 minutes before cutting and serving.
