Recipe Below⬇️ Last night was one for the history books 🍷✨ We made Bobotie and South African yellow rice from a cookbook I purchased in South Africa, bringing a little piece of the Cape to our table for the Southern Alberta Pioneers & Their Descendants wine tasting 🌍🫖 As a proud board director and member, it was such a joy to help pour wine, connect with guests, and celebrate an evening filled with beautiful food and stories. The event was a smashing success - featuring wines and flavours from South Africa, France, and Portugal 🇿🇦🇫🇷🇵🇹🍷 What I cherish most are the people. The laughter. The shared appreciation for Calgary’s history and the stories that built this city. There’s something incredibly special about gathering with fellow members who care so deeply about preserving and honouring our heritage 🤍 Grateful for community. Grateful for history. And always grateful for a table that brings us together. ✨ BOBOTIE The dish we know today as bobotie was popular in Europe in the Middle Ages, after the Crusaders introduced turmeric from the East. Bobotie was traditionally made with meat left over from the Sunday roast. Ingredients 1 slice white bread 250 ml milk 1 kg lean minced beef or mutton 1 medium onion, peeled and finely chopped 125 ml seedless raisins 125 ml blanched almonds 15 ml smooth apricot jam 15 ml fruit chutney 25 ml lemon juice 5 ml chopped fresh mixed herbs 10 ml curry powder 5 ml turmeric 10 ml salt 10 ml sunflower oil 3 large eggs 4 bay or lemon leaves Method Soak the bread in 125 ml milk, then squeeze it dry and reserve the milk. Mix the bread with the minced beef or mutton. Mix in all the other ingredients, except the remaining reserved milk, the oil, eggs and bay or lemon leaves. Heat the oil in a frying pan and brown the meat mixture lightly. Turn it out into a casserole. Beat the eggs with the remaining reserved milk and pour the mixture over the meat. Garnish the top of the mixture with the bay or lemon leaves and bake at 180°C for approximately 50 minutes, or until set. Serve with Yellow Rice with Raisins. Serves 6–8. Sweet, savory, and deeply comforting 🤍 Recipe: Ingredients: 2 slices white bread 2 onions, chopped 25g butter 2 garlic cloves, crushed 1 kg lean minced beef 2 tbsp Madras curry paste 1 tsp dried mixed herbs 3 cloves 5 allspice berries 2 tbsp peach or mango chutney 3 tbsp sultanas 6 bay leaves 300 ml full-cream milk 2 eggs Instructions: Preheat oven to 180°C. Soak bread in water. Cook onions in butter until soft, add garlic and beef. Stir in curry paste, spices, chutney, sultanas, and seasoning. Simmer 10 minutes. Add squeezed bread into mixture. Transfer to baking dish and smooth the top. Mix milk and eggs, pour over meat. Add bay leaves. Originating from Cape Malay cuisine, this rich, thick dish is typically served with white rice and is known to taste better when prepared a day in advance. Some of the food people now call luxury… were once called poor people’s food. Lobster? In the 1800s was so cheap in America that prisoners were fed it constantly. Oxtail? That was one of the scraps enslaved people were given after the ‘better’ cuts were taken. Ramen, pho, gumbo all born from communities making something incredible out of very little. The food for thought is maybe these foods didn’t become valuable because they changed. Maybe they became valuable when the people who were once forced to eat them were no longer the ones serving them. 🌱 meat replacement 🍄‍🟫 oyster mushrooms and shiitake (optional) 🌱 coriander (optional) 🧅 Onions 🧄 Garlic 🍅Tomato 🥔 potato Seasoning: veg broth (optional), salt, black pepper, pimento (optional), bay leaf 1. Sautee your onions and garlic 2. In a pan cook down your meat and mushrooms 3. Then add two cans of chopped tomato and water 4. Then add your seasoning and potatoes 5. Add water, cover your lid and let it stew down 6. Then serve in a bowl with rice and veg or sides of your choice
