Recipe:
Marinate:
Chicken 600g
Turmeric 1/2 tsp
Salt
Roast & Grind:
Black sesame/Kala til 1/3 cup
Mustard oil 2-3 tbsp
Bay leaf/Tej Patta 2
Red Chillies 3
Onion 3 medium
Ginger 1 inch
Garlic 8-9 cloves
Slit green chillies 4
Cumin powder 1 tsp
Coriander powder 1 tbsp
Garam masala 1/2 tsp
Black sesame powder
Water
Garnish:
Coriander
Slit green chillies
Lemon juice

VIBoiled Siken*! I finally learnt how to make this ICONIC Northeast Style Boiled Chicken Recipe. Every state/community has their own version but this one is definitely my personal favourite. It's filled with the zing of dried chillies, ginger-garlic and a significant dash of fermented bamboo shoot. I knew this recipe tasted great with pork but I am gonna say the chicken version has its own fanbase. Whenever I land in Assam, the first thing I have is a boiled pork or chicken thali. I am over the moon and Saturn on having learnt how to make this.

RUBlack Chicken Curry From Assam🖤
🐔 Ingredients
• 350 g chicken
• ¼ cup curd
• Salt to taste
• ¼ tsp turmeric powder
• 1 tbsp chili paste
• 2 tbsp black sesame seeds
• 3 tbsp mustard oil
• 1 bay leaf
• 1 cinnamon stick
• 2 large onions (sliced)
• 1 tbsp ginger garlic paste
• 1 tbsp Kashmiri red chili powder
• 1 tsp cumin powder
• 1 tsp black pepper powder
• 2 green chilies (slit)
• 1 cup water
• Fresh coriander (for garnish)

🍳 Method
1. Marinate the chicken
In a bowl, add chicken, curd, salt, turmeric, and chili paste. Mix well and let it marinate for at least 15 minutes.
2. Prepare sesame powder
Dry roast black sesame seeds for 2–3 minutes (don’t over-roast or it may turn bitter). Let it cool, then grind into a powder.
3. Cook the base
Heat mustard oil in a pan. Add bay leaf and cinnamon stick. Then add sliced onions and cook until golden.
4. Add aromatics
Add ginger garlic paste and cook for 1–2 minutes.
5. Cook the chicken
Add the marinated chicken and cook for 4–5 minutes.
6. Add spices
Add Kashmiri chili powder, cumin powder, and black pepper powder. Cook until the oil starts to separate.
7. Final cooking
Add slit green chilies, ground sesame powder, and water. Cover and cook on low flame for 15 minutes, stirring occasionally.
8. Finish & serve
Garnish with fresh coriander and serve hot with roti, paratha, or rice.
