It can be eaten by soaking for a short time in water. Jolpan is commonly served to guests during festivities and communal gatherings and shows integral role of rice in Assamese tradition.This variety of rice is sticky in nature, you can have non- sticky variety also. I personally prefer sticky variety of Jolpan whether it is Sira, Muri or Kumol saul. There are varieties of Jolpan in our culture e. g., Kumol Saul, Bora saul, Sira doi, Hurum, Akhoi, Muri, Xandoh etc. Traditionally jolpan is served with milk, curd, jaggery, banana and cream. For making this recipe, soak the rice in water for approximately 10- 15 minutes, once the grain has softened, drain the excess water and serve with Banana, yogurt and jaggery.
