This is a no-overthink, overnight sourdough formula that delivers consistent results—perfect for busy schedules, weekend bakes, and sharing two beautiful loaves with people you love.

RECIPE (2 LOAVES):
• 720g water
• 170g sourdough starter
• 20g salt
• 1000g unbleached white flour
Mix everything together.
Cover and stretch & fold every 30 minutes (4 rounds).
Let proof overnight.
Refrigerate for 6 hours.
Preheat Dutch oven (lid on) at 450°F for 1 hour.
Divide and shape dough.
Bake 30 minutes covered.
Remove lid and bake 15 minutes more.
Cool completely before slicing (the hardest part).
