Deep Dish Cookie Skillet
2 sticks butter, softened
3/4 cup granulated sugar
3/4 cup packed brown sugar
2 large eggs
2 teaspoons pure vanilla extract
2 1/4 cups all-purpose flour
1 tablespoon cornstarch
1 teaspoon baking soda
1 teaspoon salt
1 1/2 cups semisweet chocolate chips
1/4 cup Nutella
Powdered sugar, for dusting (optional)
Instructions
1. Preheat the oven to 350°F.
2. In a large bowl with a hand mixer or in the
bowl of a stand mixer beat the butter and both
sugars until light and fluffy, about 3 minutes.
Add the eggs and vanilla and beat until fully
combined.
3. In a separate bowl, whisk together the flour,
cornstarch, baking soda, and salt. Add the dry
ingredients to the wet ingredients and beat
until combined. Fold in three-quarters
of the chocolate chips and chill for 30 minutes.
4. Press half the cookie dough into a 10-inch cast-iron
skillet. Spread with a layer of Nutella, top with the remaining cookie dough,
and sprinkle with the remaining chocolate chips.
5. Bake until the cookie is set and the edges are
golden brown, about 30 minutes (I like it a little
underbaked so it’s extra gooey). Top it off with
a dusting of powdered sugar if you wanna go
crazy!

ZABaking cookies is my love language 🥰 had some excess pineapple jam lying about so more pineapple tarts in the house but this time the soft, buttery, melt in your mouth kind. My favourite!
200g softened salted butter
50g icing sugar
2 tbsp ghee
2 egg yolks
1 tsp vanilla
1/4 tsp salt
350g plain flour
1 tbsp corn flour
Pineapple jam (recipe in my previous post!)
Cream together butter, ghee & sugar until light and fluffy. Beat in the egg yolk one at a time. Add vanilla and salt and beat again till combined.
Sift in the flours then fold into the butter mixture. Stir to form a soft dough. Roll the dough between two sheets of baking paper and trace using the tart cutter. Transfer to a lined baking tray then add in a piece of the rolled pineapple jam.
Bake at 160°C for 12-15 minutes or until golden. Careful to not over bake as the jam will harden. Serve then store the cookies in an airtight container.
