It’s light yet packed with flavor and comes together in one pan for easy cleanup. 🌶️ WHAT YOU’LL NEED: chicken thighs • plain yogurt • minced garlic + spices + oil • basmati rice • lemon • your favorite chutney/sauce. 🌶️ RECIPE + INSTRUCTIONS: -Wash, rinse, and soak 1.5 cups rice. -to a bowl add 1 lb boneless and skinless chicken thighs (i had 5 pieces) -add 1/2 cup plain yogurt + 1 tsp minced garlic + 1/4 cup oil. -then SPICES: 1 tsp garam masala, ground cumin, paprika, and turmeric. 1.5 tsp salt, 1/2 tsp black pepper, and the juice of 1 lemon. Mix well. If you want a more “red” color you can add food coloring or increase paprika. -cook chicken on both sides and set aside. -to the same pan with pan drippings/oil from chicken add drained rice -season with 1 tsp salt, 1 tsp ground cumin, and 1/2 tsp turmeric. -toast/sear for 2-3 minutes -add 3 cups of water -place chicken back on top. let it come to a boil. lower heat to low.
