Battenberg Cake Anyone would love this chequered cake which has a rich history and amazing taste and is a staple at the British afternoon tea. Let the looks not intimidate you, as it’s an easy cake to put together. Detailed recipe as follows, ¾ cup Caster sugar 1¼ cup All-purpose flour ½ cup Almond flour 2¼ tsp Baking powder 3 nos Eggs room temperature ¾ cup Butter room temperature ½ tsp Vanilla extract 3 drops Pink food colour gel ⅓ cup Apricot jam 250 gms Marzipan To make the cake batter, sieve the dry ingredients together. In a mixing bowl mix egg, butter and vanilla extract together. Add the dry ingredients into it. With a beater mix the batter till its well combined and smooth. The batter will be a thick one.Divide the batter equally. To one half of the batter add the pink food colouring and mix well. I used a bread tin to bake the cakes. Place the tin in the centre rack of an oven preheated to 180°C. Bake for 25-30 minutes till the cake is well baked.You have two cake, a yellow and pink one. Trim them to get 4 long square cakes like in the video. Stick the cake sponges with apricot jam. Let me know in the comments 👇🏻 Battenberg Cake makes 8 to 10 Slices Ingredients 200g x Soft Unsalted Butter 200g x Caster Sugar 4 x Eggs 200g x Self-Raising Flour 1tsp x Vanilla Bean Paste or Vanilla Extract Red or Pink Food Colouring Filling & Decoration 170g x Apricot Jam 1 x Pack of Marzipan Icing Sugar for Dusting Method 1. Preheat the oven to 150°C fan and grease and line two loaf tins with parchment paper. 2. Using a stand mixer with the paddle attachment, cream together the butter and sugar until light and fluffy. This will take 3 to 5 minutes. You can also use an electric hand whisk for this. Mix in the eggs and vanilla until fully incorporated. Sift and fold in the flour. 3. Split the batter into two halves and colour one half with food colouring until it is a nice shade of pink. Place the pink batter in one tin and the plain batter in another and spread out using a spatula.    4. Place into the preheated oven and bake for 35 to 40 minutes or until a skewer comes out clean. Cool on a wire rack. 5. Cut each cake in half lengthways and cut off the crusts aiming to create 4 long rectangle shapes (2 of each colour). 6. Warm the apricot jam in a saucepan and pass through a sieve. 7. Dust the workbench with icing sugar and roll out the marzipan to 2mm in thickness making sure it’s big enough to cover the whole cake. Brush with the apricot jam. 8. Build the cake in the centre of the marzipan brushing each piece on all sides with jam. Wrap the cake with the marzipan allowing it to overlap slightly and trim off the excess. 9. Slice, Serve and enjoy! #battenberg #cakes #recipe

It is really an easy cake to make if you just want to cover it in marzipan instead, but with just a few ingredients and only one bowl, it’s a yummy, simple dessert! Recipe 175 grams room temp butter 175 grams sugar 150 grams cake flour 40 grams almond powder 2 tsp baking powder Pinch of salt Splash of vanilla and almond extract Coloring Cream together butter and sugar till light and fluffy. Add eggs and mix well. Combine dry ingredients. Add half to greased pan. Color the other half and add to pan. Weekend Bake: Technical - mini battenbergs Always trickier to make something you hate the taste of because when it starts to go wrong, you have little interest in rectifying it. As seen here. A list of my mistakes so you can avoid them: - My size of tin meant there was nothing mini about these cakes. I had to weigh 4 eggs rather than 3 to increase the mixture to suit my tin. - The instructions for lining the tin nearly had me throwing the whole lot out of the window, but what I did end up doing, worked. I have no idea if that’s what I was supposed to do… - I’m pretty sure there’s a typo in the recipe, or it’s been edited by an American, because it calls for granulated sugar and I’m convinced it means caster - granulated resulted in my marzipan looking like some horrific skin complaint - I accidentally made a sort of apricot toffee which tasted nice and I might try and recreate when I don’t need jam. I never use jam sugar and the added pectin threw me to be honest, easier with normal sugar if that’s what you’re used to! - The recipe only says to put buttercream in the middle half of the sponge grid, which I think is stingy. If I liked Battenberg, I would like my icing to make a cross shape when I sliced it, coating each square. But I don’t like it, so that’s of no significance. - my food processor wasn’t big enough to make the marzipan in one go, so I had to blitz it in batches and this was the straw the broke the camel’s already fractured back. If you’d like a go, the recipe is on the Bake Off website. My difficultly rating (if you had the right equipment) 5/10. . . . #gbbo #bakeoff #technical #battenberg

I also ordered all the ingredients (and a few variation ingredients) to make my own pizza dough. I’m going to put it up beside all the ingredients I got to make my own flatbread 6 months ago- I have no intention of making either 😂.
