SOFT BISCOFF COOKIES with Biscoff buttercream icing 😍 Let’s make Biscoff cookies out of biscoff cookies… 👀 They’re super soft and moist and the Biscoff buttercream is just incredible! 🤤 Sound on for full instructions 🔉 All you need is: For the cookies: 250g Lotus Biscoff biscuits 145g plain flour 25g cornflour 1/2 tsp bicarbonate of soda 1/4 tsp baking powder 1/2 tsp salt 190g unsalted butter, softened 90g granulated sugar 30g icing sugar 1 large egg, room temp For the Biscoff buttercream: 60g Unsalted Butter, softened 60g Biscoff spread 180g Icing sugar, sifted 1 tbsp Milk 2 cushed Biscoff biscuits to decorate Makes approx 14-15 cookies Bake 180C/160C (fan) 8-10 mins - let them cool before making the icing 🥰 Make sure you don’t overbake otherwise they’ll go hard and crunchy 🙅‍♀️ Enjoy! #fitwaffle #fitwafflekitchen

Ending 2025 with my most popular recipe (and a personal favorite) of the year! Biscoff Cookie Butter Cinnamon Rolls 🤎✨ (makes ~8 rolls) Dough: ¾ cup (180g) warm milk 1 packet instant yeast (2¼ tsp/7g) *if using active dry yeast, gently stir it in with the warm milk and sugar then let sit 5-10 min until foamy ¼ cup (50g) granulated sugar 1 egg + 1 egg yolk, room temp ¼ cup (57g) unsalted butter, melted 3-3½ cups (360-420g) all purpose flour (start with 3 cups and only add more if it’s super sticky) ¾ tsp salt + ⅓ cup warm heavy cream to pour over the rolls right before baking Biscoff cinnamon filling: ⅓ cup (76g) unsalted butter, softened ⅓ cup (~80g) Biscoff spread/cookie butter ¾ cup (165g) brown sugar, packed 1½ tbsp cinnamon + crushed Biscoff cookies Cream cheese icing: 6oz (170g) cream cheese, room temp (block style, not spreadable) ¼ cup (57g) unsalted butter, room temp ⅓ cup (~80g) biscoff spread 1 cup (120g) powdered sugar ½ tsp vanilla Instructions: Combine the warm milk, sugar, and instant yeast. Add eggs and melted butter, mix. Stir in salt and flour. Mix until a soft dough forms. Knead the dough for 8-10 min. Place in a lightly greased bowl, cover, and let rise for 1-1½ hrs or until doubled. For the filling, mix the soft butter, biscoff spread, brown sugar, and cinnamon until combined/spreadable. Roll dough into a large rectangle on a lightly floured surface. Spread biscoff cinnamon filling evenly and scatter the crushed biscoff cookies on top of it. I like to use a pizza cutter or knife to first slice 8 pieces then roll them each up tightly. (Or you can tightly roll the whole thing then slice) Place in greased 9x13 pan. Cover and let rise 35-45 min. Pour warm heavy cream over the rolls right before baking. Bake at 350°F for 22-28 min until golden. (tent with foil towards the end if the tops are browning too quickly) To make the icing, beat cream cheese, butter, and biscoff spread together until smooth. Then, beat in powdered sugar and vanilla until fully combined. Spread over warm rolls and sprinkle extra crushed biscoff cookies over the top. Enjoy! #baking #cinnamonrolls #biscoff #cookiebutter

For those of you who want egg substitute, simply save the recipe on recime app and ask recime , it will give u many substitutes 😉 BASE COOKIE DOUGH 3/4 cup butter (170g), very soft 1/2 cup white caster sugar (100g) 1/2 cup + 2 tbsp brown sugar (125g) 1 large egg + 1 egg yolk 2 1/4 tsp vanilla extract 2 1/2 cups flour (300g) 1 1/2 tsp cornflour 3/4 tsp baking soda 1/3 tsp baking powder 3/4 tsp salt Biscoff Cookie • 2-3 crushed Biscoff cookies • 4 tbsp Biscoff spread, spooned into 4 balls and frozen. Triple Chocolate Chip Cookie • 2 tbsp cocoa powder • 2 tbsp milk • White, dark, and milk chocolate chips (adjust as needed) Pistachio Chocochip • 60g chocolate chips • 40g crushed pistachios Coffee Caramel Cookies • 1 tbsp coffee powder • 4-5 caramel candies, cubed • Chocolate chips Method: Whisk together flour, cornflour, baking soda, baking powder, and salt. In a separate bowl, mix very soft butter with both sugars until combined. Add egg, egg yolk, and vanilla, mixing until smooth. Gradually mix in dry ingredients until just combined. Divide dough into four parts and mix in the ingredients for each flavour. Preheat oven to 175°C (350°F). Scoop out 4 cookies from each dough into, placing frozen Biscoff spread inside of Biscoff cookie dough. Bake for 9-10 minutes until edges are set but centers remain soft. Crush the Biscoff cookies in a food processor until very fine. 2. Melt the butter. In a bowl, mix the crushed cookies with melted butter and a pinch of salt until fully combined. 3. Press the mixture firmly into the bottom of a round springform pan, creating an even crust. Place in the fridge while preparing the filling. 4. Whip the cold heavy cream until fluffy and medium-stiff peaks form. Set aside. 5. In a separate bowl, beat the cream cheese, powdered sugar, Biscoff spread, vanilla extract, and a pinch of salt with a hand mixer until smooth and light. 6. Gently fold the whipped cream into the cream cheese mixture until fully combined and creamy. 7. Spread the filling evenly over the chilled crust and smooth the top. 8. Melt the Biscoff spread for the top layer and carefully pour it over the cheesecake. Tilt the pan gently to spread it evenly. 9. Decorate with crushed Biscoff cookies around the edges and place two whole cookies on top for decoration. 10. no-bake creamy biscoff cheesecake 🤎🍰 crust 3 packs (375g) biscoff cookies, finely crushed ¾ cup (170g) salted butter, melted 2 tablespoons (25g) brown sugar 1 pinch salt filling: 24 oz (680g) cream cheese, room temperature 1 cup (120g) powdered sugar ½ cup (120g) biscoff spread 1 ½ cups (360g) heavy whipping cream, cold 1 tbsp vanilla extract 1 pinch salt top layer ½–¾ cup (120–180g) biscoff spread, melted instructions blend the biscoff cookies ( i used a food processor, if you don’t you might not need as much butter because it makes it super fine ) mix the crushed biscoff cookies, brown sugar, salt, and melted butter until it looks like wet sand. it should clump when pressed in your hand. press firmly into a 9-inch pan, going slightly up the sides. compact it well so it holds when sliced. refrigerate at least 30 minutes to firm up. in a large bowl, beat the cream cheese until completely smooth and fluffy. add vanilla, biscoff, salt & half of the powdered sugar and beat again until silky. in a separate bowl, whip the cold heavy cream and the other half of the powdered sugar to stiff peaks. gently fold it into the cream cheese mixture in batches until smooth and airy. do not overmix or it will deflate. spread the cheesecake filling over the chilled crust and smooth it evenly. refrigerate at least 6 hours, preferably overnight, until fully set. before serving, warm the remaining biscoff spread and pour over the top, smoothing it gently to the edges. chill 20–30 minutes to slightly set before slicing. #biscoff #cheesecake #nobakecheesecake #Recipe #baking

In a bowl, whip the heavy cream with powdered sugar and vanilla until soft to medium peaks form. Set aside. 2. In a separate bowl, beat the mascarpone and Biscoff spread until smooth and well combined. 3. Gently fold the whipped cream into the mascarpone mixture in 2–3 additions. Be careful not to overmix. (I overmixed mine a little😅) 4. Quickly dip each Biscoff biscuit into the espresso and arrange them in an 8-inch baking dish. 5. Spread half of the cream mixture evenly over the biscuit layer. 6. In a large bowl, whip the cold heavy cream with the powdered sugar and vanilla extract until soft to medium peaks form. Add the mascarpone and Biscoff spread, then gently mix until smooth and creamy. Avoid overmixing to keep the cream light and fluffy. Dip the Biscoff cookies quickly into the cooled coffee, just for a second so they don’t become too soggy.
