2 Hour Twisted Baguette 🥖 Ingredients: 550-560 gr AP flour 500 ml lukewarm water 12 gr of instant yeast 2 tsp of salt 2 tsp honey (about 20-25 gr) Mix water, yeast and honey together and set it aside for 15-20 min. Then add it to the salt and flour and mix well. Let it rest for 90 min. Then transfer onto a well floured surface. Add more flour on top and divide it In half. Twist and bake at 460°F (some ovens are different so if you need to adjust the temp to 475°F) for 25 min (if you like it extra crunchy bake for 5-8 min longer). Let it cool completely before enjoying 🥰🥖 #BrightAppetite

Spouted lentils..not only stunning but delicious🌱 How I prepared mine: I started by rinsing my dry lentils (got mine from Trader Joe’s) and soaking them overnight. The next day, I spooned the soaked lentils into the bottom of each dish with just a small amount of water. For the first four days, I placed a damp paper towel over the top to help create a moist environment for sprouting. Once the lentils reached about an inch of growth (4 days), I removed the paper towel so they could continue growing vertically. Each day, I rinsed them under fresh running water—sometimes twice a day—and made sure not to let water sit at the bottom to prevent mold or any off smells. Keeping them rinsed with fresh water helps them stay clean and fresh. The result is beautifully sprouted lentils that are incredibly delicious and perfect for adding to all kinds of dishes. 🌱 #BrightAppetite

🌱Most common questions asked on my sprouted lentil video: are they edible? How do you eat them? Do you eat the whole thing? When lentils go through germination, some of the starches and compounds that can make legumes harder to digest start to break down. This makes the nutrients easier for your body to absorb and can slightly increase things like vitamin C and certain B vitamins and antioxidants . They also develop a fresh, slightly nutty & sweet flavor and a little crunch. I usually eat them raw once they’ve sprouted .. root, lentil, and sprout together. You can definitely only eat the sprouted part as well. I love adding them to salads, avocado toast, sandwiches, grain bowls, even just sprinkling them over yogurt or roasted veggies for texture. You can also lightly sauté them or toss them into soups if you prefer them warm. Important tip: rinse and drain the lentils a couple of times a day so they stay fresh and don’t sit in stagnant water. Make sure they’re well drained after each rinse ..they should be hydrated but not sitting in water. Try to eat them within about 5-7 days. Sprouted lentils should smell fresh and slightly earthy .. that’s how you know they’re good. If they ever smell sour, feel slimy, or look moldy, it’s best to discard them. Boil in heavily salted water for 8–9 minutes until al dente, then drain and rinse under cold water. Let it drain well. Bloom saffron and gently fold it into the rice for that beautiful color and aroma. Generously grease a baking dish (avocado oil works great), line it with lavash, then add the rice on top. Drizzle with a little more oil and dot with butter. Bake at 375°F for about 30 minutes, until deeply golden and crisp. Let it rest, then flip and reveal that crunchy crust. Serve with a stew, salad, fresh herbs — or enjoy it on its own. Crispy, golden perfection. ✨#BrightAppetite

Homemade hotdogs 🌭 Buns: + 1 cup of warm milk (230 mL) + 3 tsp of yeast (10 gr) + 1 tbsp of honey + 3.5 cups of flour (450 gr) + 2 tsp of salt (10 gr) + 3 tbsp melted butter +1 egg Add the yeast and honey to the warm milk and let it bloom. Once activated, add in the flour, salt, melted butter, and egg, then knead for 6–8 minutes until a soft dough forms. Transfer the dough to a well-oiled bowl, cover, and let it rise for about 90 minutes. Preheat the oven to 350°F, then move the dough to a clean surface and divide it into 8 equal pieces. Roll each piece into a ball, flatten into a rectangle, then roll it up tightly, sealing the edges well, especially on the final seam. Place on a baking sheet, brush with egg wash, and bake for 20–25 minutes until golden. Let them cool completely before serving. Hotdogs: + 2 chicken breads + 3 large carrots + 3 beets + 2 tspn cumin + 2 tspn garlic powder + 2 tspn onion powder + 2 tspn salt + 1 tspn turmeric + 1 tspn black pepper Boil the carrots and beets until fork-tender, then drain and let them cool completely. Add the cooled vegetables to a food processor along with the raw chicken and all the spices, and blend until you get a smooth, thick paste. Transfer the mixture to a piping bag and pipe a thick line onto plastic wrap. Roll it tightly into a hot-dog shape, twisting and sealing both ends. Bring a pot of water to a boil and carefully drop in the wrapped hot dogs, cooking for 10–15 minutes until firm and fully cooked. Remove them from the water, carefully unwrap.
