CAWalleye Pasta 🎣
Harvest some hungry walleye, and put this delicious pasta dish together.
INGREDIENTS:
- 2 walleye fillets
- your favourite noodles
- 2 garlic cloves
- 1 handful of olives
- 2 tbsp of capers
- 2 handfuls of cherry tomatoes
- 1 tbsp of lemon zest
- Juice of ½ a lemon
- ¼ cup sundried tomatoes
- ¼ cup of feta
- ¼ cup Italian parsley
- Fresh basil
- Salt & Pepper
Bring water to a boil. Heat a large pan to medium-high and saute the capers and olives for a minute-ish. Add the cherry tomatoes and allow them to brown. Add sundried tomatoes, lemon zest, and garlic with a pinch of salt and pepper. Cook for another minute or two.
Cook noodles.
Add the walleye and season with salt and pepper. Try to move the fish as little as possible, as it becomes delicate as it cooks.
Once the fish has turned white, deglaze the pan with lemon juice. Add feta and a scoop of pasta water. Add noodles, parsley, and basil, then mix.
Serve with a drizzle of olive oil and a squeeze of fresh lemon. Enjoy!
