This flour is such a joy to work with, had so much fun! 285g @ballerinafarmstore farm flour 270g water 60g levain 6g @bajagoldsaltco of course I did an overnight autolyse, then added my starter first thing in the morning. Let it fermentolyse for an hr then added my salt. I believe it had a total of 8-10 coils (I didn’t keep count or check the dough temp 😆) It was so fun to see the transformation of this dough! This flour can handle so much hydration, it’s amazing. I did no preshape, just a light shaping method then into my @rosehillsourdough proofing baskets (my favorite!) then into the fridge overnight then baked the next day to golden perfection in my @challengerbreadware 🤩 Scored using my Nux from @wiremonkeyshop 😍 Who else has used this flour? My first bake done in @challengerbreadware bread pan. I'm quite impressed with the quality and final finishing. It heavy and really well made for the Sourdough bread baking. Easy to place the dough in high temp preheated pan becoz of shallow base and deep top cover. Does keep the steam intact thus resulting in a good oven spring for the dough. Multiple handles further gives easy handling during the bake. I noticed a slightly longish bake (dough expanded in lenght rather than all round). Will do more bakes to try it out more with different scoring. Definetely need to preheat little longer than the other DO becoz of its size and weight. This bake - country Sourdough dough with 75%hydration. Preheated at 250 °c (40 mins) and bake done at 240 - 20mins and 220 - 20 mins. (covered and uncovered) in convection oven setting. Scoring done with #rblame Curve More to Come. 👍To @challengerbreadware. Big thanks to Bethany @chill.spice for arranging the order and delivery. 70% hydration sourdough loaf. I put a new blade on my @wiremonkeyshop UFO Bread Journey lame today and so I figured I would do a fun score since it’s nice and sharp. I like how this one turned out but I feel like there is always a trade off in the final appearance of the loaf when you are doing an decorative score like this versus just one single functional score. This loaf turned out incredible soft and i immediately made a nice sandwich out of it after it cooled down. 😁 I used my @challengerbreadware bread oven to cook this!
