Jokes aside, I hope no Italian chef sees this and gets mad! 😅 Here’s the thing about using garlic in Italian cuisine, something Chef AJ first discovered during his culinary school days at @icif_italia . Italians don’t actually cook with garlic… they use it to flavor the food. What does that even mean? Well, in Italy you’ll see a chef smash a clove, throw it into a pan with olive oil, toast it until golden and fragrant… and then take it out and toss it. That’s it. The garlic girlies are screaming, I know!!!! 😭 Now here at ESO, we may not be very traditional, but hear us out… We make garlic confit. Huge batches. Like… HUGEEEE. (Check our pinned post to see the process 👀) By slowly cooking garlic in olive oil on low heat for over 4 hours, we get rid of the strong, punchy bite and crunchy texture. Instead, we’re left with something creamy, buttery, mild, and almost sweet. Literal magic! We strain the oil and save it for the next batch to keep building flavor. And the garlic? It goes straight into three of our most-loved sauces: Arrabbiata, Pomodoro, and Ragù Napoletano. And between us… sometimes I just eat it on bread. It’s THAT good. 🤌 The texture is so spot on that once a customer messaged us thinking they found meat in their vegetarian Arrabbiata. The shock when we told him it was garlic and that he should try it because it would change his world. Spoiler: it did. Now he comes once a week and keeps asking when we’re going to start selling garlic confit. Should we though? 😉😏
