Marinated Mozzarella, Artichoke & Olive Antipasto This vibrant antipasto platter is inspired by classic Italian flavors and makes a perfect appetizer for gatherings or a light snack with crusty bread. Ingredients (continued): Kalamata olives – 1 cup, pitted Marinated artichoke hearts – 1 cup, drained and halved Instructions: Start by preparing the herb-infused oil. In a small saucepan over very low heat, combine the extra virgin olive oil, sliced garlic, rosemary, thyme, and crumbled dried red chili peppers. Warm gently for 3–4 minutes to release the flavors—do not let it simmer or fry. Remove from heat and stir in red wine vinegar, chopped parsley, sea salt, and freshly ground black pepper. Let the mixture cool completely to room temperature. In a large bowl, combine the drained ciliegine mozzarella, Kalamata olives, and artichoke hearts. Pour the cooled herb oil over the mixture and toss gently to coat everything evenly. Cover and refrigerate for at least 2 hours, preferably overnight, allowing the flavors to fully develop. Before serving, bring to room temperature for about 20 minutes. Transfer to a serving dish, spoon extra marinade over the top, and garnish with fresh rosemary. Yield: 6 appetizer servings Prep Time: 15 minutes Marinate Time: 30 minutes Total Time: 45 minutes INGREDIENTS 1 (16 oz) jar Mezzetta® Golden Greek Peperoncini, drained (about 18-20 peppers) 6 ounces Athenos Traditional Crumbled Feta Cheese 2 tablespoons extra-virgin olive oil 1 teaspoon dried oregano 1 tablespoon chopped fresh parsley Freshly cracked black pepper ½ cup extra-virgin olive oil ½ tsp dried oregano Pinch crushed red pepper flakes 1 tablespoon fresh dill INSTRUCTIONS 1. Drain the peperoncini well and pat dry. Trim off the stems while keeping the peppers whole. 2. In a bowl combine the feta, olive oil, garlic, oregano, parsley, and black pepper. Mix until creamy, but still slightly chunky. 3. Spoon or pipe the feta mixture into each peperoncini until filled and place stuffed peppers in a shallow dish. For easier stuffing, transfer the feta mixture to a zip-top bag and snip the corner to pipe the filling neatly into each pepper. 4. Pour olive oil over the peppers and sprinkle with oregano, dill, and crushed red pepper. 5. Let sit 30 minutes for flavors to meld or serve right away.
