Chicken Francese 2 chicken breasts sliced into 3 pieces 1 cup AP flour mixed with 1Tbsp salt & 1tsp Black pepper 3 eggs whisked EVOO for frying 2/3 cup white wine 1.5 cups chicken stock Juice 2 lemons 3Tbsp butter cubed & coated in 1.5Tbsp AP flour Chopped parsley Lemon slices for garnish -Pound chicken breasts -Coat in egg, then into flour. Wait 3 minutes then straight into a good amount of EVOO over medium heat -Cook chicken on both sides until golden brown, remove from pan -Wipe out excess frying oil -Add white wine, simmer for 5 minutes -Add chicken stock and reduce by 1/4 -Add lemon, simmer for 5 minutes -Add coated butter and whisk until completely emulsified -Reduce to desired consistency -Season with salt to taste -Add parsley and chicken, coat with sauce -Simmer 5 minutes. Method: Halve the chicken breasts and pound thin, season flour with salt & pepper, and dredge the chicken in flour. Beat eggs with grated Parmigiano. Dip floured chicken into egg mixture. Heat neutral oil in a skillet. Fry chicken until golden on both sides. Remove and set aside. Drain most of the oil, leaving just a little in the pan. Add lemon slices and lightly sear both sides. Remove and reserve. Deglaze the pan with white wine. Let it reduce by half. Add chicken stock and lemon juice, then bring to a simmer. Stir in butter rolled in flour until the sauce thickens slightly. Season with salt and pepper. Stir in chopped parsley. Return chicken to the pan, coating with sauce. Plate chicken, spoon sauce over the top, garnish with seared lemon slices and extra parsley

However, chicken francese is one of my favorites. It’s kind of like a lighter chicken cutlet, battered only with flour and egg, served in a super delicious white wine lemon sauce. My version of the story adds in thinly sliced charred lemon — which truly makes the dish — and draws on the basic techniques I learned in culinary school to make a banger of a pan sauce. You’re gonna love this easy quick chicken franchise recipe. It’s the most moist, tender flavorful chicken you’ll ever taste. Check it out. You will need: 2 chicken breast package 2 lemons/ one sliced and 1/2 for the juice 1/2 cup white wine like chardonnay 2 cloves of garlic 1/4 cup of olive oil 45 g unsalted cold butter 2 extra large eggs 1/2 cup all purpose flour plus two more tablespoons 1 3/4 cup low sodium chicken stock 2 tbsp finely chopped Italian parsley Salt and pepper to taste Preparation: Start by prepping the the garlic, chop very finely and set aside. slice one lemon into relatively thin slices and cut another in half. Chop a handful of parsley very finely, set aside. Slice each chicken breast in two and use a mallet to flatten the chicken breast and make it even. You’ll end up with 4 good size chicken breasts and a meal enough for 4 people. Whisk the eggs and season with salt and pepper. Season the flour as well with salt and pepper. Dunk the chicken in the flour and cover all sides then dip in the egg mixture. Add the 2-3 tbsp of olive oil to a cast iron pan and let it become hot enough before adding the chicken breast. Do not over crowd the pan, cook for 2-3 minutes on each side. Add more oil if needed before you cook the other two. When you finish cooking the chicken, add the garlic then the wine. Let the wine reduce in half then add 1 cup of chicken stock, the lemon slices and lemon juice. Mix the flour and the rest of chicken stock, add on top of the sauce to thicken. Adjust the seasoning and finish with the cold butter. Whisk it and put back the chicken and let it simmer for 5 minutes. Chicken Francaise This is one of our absolute favorite classic Italian American dishes. The chicken is lightly battered and fried and it’s finished with a buttery lemon sauce that is simply delicious. This dish is super simple to make and in under 30 minutes you will have a restaurant quality meal on your table. 1 lb chicken cutlets pounded thin Flour seasoned with salt and pepper 3 eggs beaten with parsley flakes and pecorino Olive oil for frying 6 tablespoons butter 1 lemon sliced coated in flour 1/2 c white wine 1/2 c chicken broth Fresh parsley Heat about 1/2 in of oil in a large skillet. Dip each cutlet in flour then eggs. Fry each cutlet until golden on both sides. Remove and set aside. Wipe the oil out of the skillet and add the butter. When the butter melts add the floured lemon slices. Cook on each side until golden then add the wine. Let it evaporate a bit then add the broth. Bring to a boil and reduce heat until thickened. Add the chicken back to the skillet and top with fresh chopped parsley. COMMENT "RECIPE" for the full recipe or scroll below for a shortened version! ❤️🥹 Ingredients: * 2 large chicken breasts. * 2 eggs. * 1.5 tbsp milk or cream. * 1/4 cup grated parmigiano reggiano. * 2.5 tsp aleppo pepper. * 2 (1 just for the zest, 1/2 kept whole, and half cut into wheels and then halved). * 1/3 cup white wine. * 12-16 oz chicken broth (depending on how saucy you want it, I did 12 oz). * 1 shallot (brunoise). * 1 large garlic clove (minced). * 1/4 cup parsley. * 2 tbsp chives (more for topping). * 5 tbsp unsalted butter. * 1 tsp soy sauce. * 1/4 cup flour. * salt and pepper to taste. Directions: 1. Butterfly the chicken breasts, then pound until desired level of thickness. 2. Whisk the eggs, add in 1 tsp aleppo pepper, the parm, milk and some seasoned salt. 3. Season your flour as well with salt and pepper. 4. Preheat a pan on high for 2 min. Add plenty of olive oil and lower to medium high. 5. Pat dry the chicken breasts, pass them through the flour then the egg wash. 6. Fry the chicken breasts on medium high until golden on both sides, about 2-3 min per side. 7. In another pan, preheat for 2 min as well. Add a bit of olive oil and the halved lemon wheels. Let them caramelize for about 2-3 min per side and remove. 8. On medium heat, add in the shallot and garlic. Deglaze with the wine and let it reduce by half. Add in chicken broth, lemon zest and soy sauce. Let it simmer until reduced by half. Should be like 8-10 min.  9. Squeeze in juice of 1/2 lemon, add aleppo pepper and herbs. Cook together for 2 more min. Turn heat off, add the butter and emulsify. 10. Serve the chicken with the sauce, more chives, the charred lemons and black pepper. #chicken #chickenfrancese #chickendinner #easyrecipes #dinnerideas
