CANTONESE WONTON NOODLE SOUP | Episode 1: Dumplings Around the World 🥟🇭🇰 We’re off to Hong Kong for the ultimate comfort bowl: silky pork and prawn wontons floating in a savoury, clear broth! - 50 wonton wrappers Wontons Filling - 250g pork mince - 250g prawns, peeled, deveined, roughly chopped - 2 spring onions, finely chopped - ½ tsp sugar - ½ tsp salt - ½  tsp white pepper - 1 tbsp oyster sauce - 1 tsp chicken bouillon powder - 1 tbsp water - 2 tbsp cornstarch  Soup - 2L chicken stock, unseasoned - 2 tsp salt - 4 spring onions, white part sliced - 2.5 cm piece ginger, sliced To Serve - Spring onion, thinly sliced - Hong Kong–style wonton noodles - Choy sum or baby bok choy Combine the pork mince, chopped prawns, spring onion, sugar, salt, white pepper, oyster sauce, chicken bouillon powder, water, and cornstarch in a large bowl. Mix well until sticky and cohesive, then cover and refrigerate for at least 30 minutes, or overnight for deeper flavour. When ready to wrap, place a wonton wrapper on your palm and add about a teaspoon of filling to the centre. Brush the edges with water, fold into a rectangle, then bring the two corners up to meet at the top and pinch to seal. Set aside on a tray and keep covered with a damp cloth to prevent drying. Bring the chicken stock to a boil in a large pot with the salt, spring onion whites, and ginger. Simmer for 10–15 minutes to infuse, then remove and discard the aromatics. Taste and adjust seasoning, keeping the broth warm over low heat. In a separate pot of boiling water, cook the wontons for 3–4 minutes or until they float. Remove with a slotted spoon, then cook the noodles and greens until just tender. Drain well. Divide the noodles, greens, and wontons among bowls. Classic Chinese tomato egg stir fry, where you get a 15 minute side dish with protein from the egg and vegetables from the tomatoes. Here's the recipe: 5 eggs 1/4 tsp salt 1/8 tsp ground white pepper 2 tbsp cooking oil - beat the eggs, salt and pepper together - cook in a pan on medium heat until you get a soft scramble then remove from the pan 2 tomatoes, rough dice 2 tomatoes, cut into large wedges 1 cup water or chicken stock 1 tsp soy sauce 1 tsp sugar 1 tsp ginger, minced 1 tsp garlic, minced 1 tbsp cooking oil 1 tbsp cornstarch dissolved into 2 tbsp of water Salt, to taste - Heat the garlic and ginger up in the cooking oil on medium high heat. Saute for 1 minute - add in the diced tomatoes and turn the heat up to high and let it cook for 3 minutes until softened - Add in the water or chicken stock and allow it to reduce for another 3 minutes. Add in the tomatoes cut into wedges and cook for 2 more minutes. - turn the heat down to low and then drizzle until the cornstarch slurry to thicken the sauce if it is too thin; then season with soy sauce, sugar, and salt to taste - side the eggs back in and chop it up with a spatula, allow it to warm through in the tomatoes for a minute. #chinesefood #tomatoegg #ricedish #chinesecooking #homecookedmeal

These homemade Chinese-style stir-fried noodles are way too easy to make. ✨ How to make them: • Boil thin noodles and set aside. • Stir-fry mixed veg in hot oil with 1 crushed garlic clove until crisp-tender. (Add chicken or prawns if you like totally optional.) • Toss in the noodles. • Add 1 tbsp each soy sauce, oyster sauce, and sesame oil, plus a pinch of sugar and a splash of water. • Stir-fry on high heat until glossy and caramelised. • Finish with spring onions and lots of pepper.
