how to poach an egg! eggs are one of those ingredients i could have cooked in pretty much any form, but a good poached egg for breakfast is just as good as pretty much any other. i think poaching eggs seems difficult because it doesn’t always yield the same perfect shape but the more effort you put in the better the result. i do know about methods like cooking the eggs sous vide for multiple hours, or soaking in vinegar to pre set the whites, i just find this method more suitable for an everyday cook while still yielding a slightly more desirable result. i also simplified the anatomy of an egg into laymans terms but the general information is pretty much the same! the reason i didn’t mention cook time is because everybody prefers their eggs in different ways so cook them to your desired doneness. as always feel free to comment below with any questions or message me directly :D #chef #learn #culinary #teach #eggs

Just making sure everything is right before service. 2️⃣ They notice every small mistake. Not to put you down — they’re just making sure you notice it too. 3️⃣ You’re given the safer jobs. More prep, smaller tasks, basic sections. Bigger responsibility usually comes after trust. 4️⃣ They fix small things on your plate. Moving garnish, wiping the rim, adjusting something quickly. 5️⃣ They don’t leave you alone on a section yet. Real trust is when chef can walk away and not worry about your station. Trust takes time. World Championship Pad Krapao 🌶️ Kaprao Ingredients - 20g garlic, chopped (6-7 cloves) - authentic spicy → 28g bird’s eye chili, chopped (roughly 8-10 peppers) - medium spicy → 12g bird’s eye chili, chopped (roughly 3-4 peppers) - 2tbsp (or more) neutral oil - 1lb 80/20 ground beef - 1 egg (for frying) - 12g fish sauce (roughly 2-3 tsp) - 12g oyster sauce (roughly 2-3 tsp) - 12g light soy sauce (roughly 2-3 tsp) - 12g dark soy sauce (roughly 2-3 tsp) - 4g sugar (roughly 1 tsp) - 2g msg (roughly 1/2 tsp) - 2g white pepper (roughly 1/2 tsp) - 15-20 basil leaves, de-stemmed - 3-4 mint leaves - pinch of clove Kaprao Steps - add the garlic and roughly 2/3 of the chili (choose your spice level) to a mortar and pestle and pound until it forms a chunky paste - heat up a pan over medium-high heat until water droplets bead across the surface - add neutral oil and wait for it to start shimmering, then crack an egg into the pan and let it fry until the edges are crispy. Tilt the pan and spoon over some of the hot oil to set the yolk. Remove the egg and set it aside. - add ground beef and cook until all the water has evaporated, once the water has evaporated, keep cooking until it begins to fry in its own fat (you’ll know when the sound changes to a crispy crackling sound) - add the chili-garlic paste to the beef and cook until you feel like sneezing AND when the beef starts sticking and forming a fond at the bottom of the pan - deglaze/season with fish sauce, oyster sauce, light soy sauce, dark soy sauce, sugar, msg, and white pepper. stir to combine - finish with the reserved chopped chili, basil leaves, mint, and pinch of clove. continue cooking until the leaves are wilted. - serve with a side of rice, nam prik pla sauce, and the fried egg on top. Nam Prik Pla Ingredients (side sauce shown in video) - 40g fish sauce - 20g lime - 10g garlic - 12g bird’s eye chili - 2g sugar Nam Prik Steps - Combine ingredients together in a bowl, that’s all. #cooking #food #recipe #culinary #thaifood
