Recipe credit- @_tiers_ ❤️ Ingredients •250g butter •1/2 cup caster sugar •1 tsp vanilla •2 egg yolks •1 tsp baking powder •2 egg whites •2 1/2 cups plain flour •1/2 cup desiccated coconut •1/2 cup strawberry jam Method •Beat butter , vanilla & sugar till light & fluffy. •Beat in the egg yolks. •Fold in the baking powder & enough flour to make a soft dough. (You may not need all the flour or may need more) •Make small balls from the dough. •Dip them in egg whites & roll them in coconut, placing them on a greased oven tray. •Make a dent in the centre using your small finger. •Mix the jam in a bowl for a few minutes so that it goes smooth enough to pipe. •Using a piping bag fill the centre of the biscuits with jam. •Preheat oven to 180c. •Bake for 10 minutes or till they are very lightly brown. •Once cool, store in a air tight container. MISHTI DOI🍮Recipe below! you guys were waiting for this one! It's light, refreshing yet still rich and decadent! Stay tuned for the taste test + vlog🙉 Follow for part 3 where I (attempt to) make handesh🤞 Mishti doi recipe 150g sugar 60ml water 1x 410g tin evaporated milk 600ml whole milk 500g live culture plain yoghurt Terracota/glass dish (at least 600ml) 1) strain the yoghurt: Place a sieve in a large bowl. Lay kitchen towels/a cheesecloth in the sieve. Add the yogurt, wrap with more towels and place a heavy weight (eg some tins) on top to draw excess moisture out of the yoghurt. Leave for 5 hours or overnight. 2) in a large saucepan, add the sugar and water, heat on medium low until golden brown caramel forms. Add the whole milk, and stir until dissolved. Boil for 20-30 minutes until the volume reduces by around 50% 3) add the evaporated milk. Cool the caramel milk mix to 37C, and add the yoghurt culture. Stir until smooth 4) smear some plain yogurt culture around the edges of the dish, this will help the yoghurt set. 5) pour the mix into the dish, cover with foil and a teatowel, and leave overnight in a warm place (around 40C). Place in the fridge until ready to serve. #ramadandesserts #bengalidesserts #mishtidoi #eidbaking

Ka’ak el Eid are the biscuits that mark celebrations in our home. The biscuits themselves are delicate and lightly crumbly, with a soft sandy texture that melts almost instantly on the tongue. Inside, the filling is rich and fragrant, the dates gently spiced with cinnamon and nutmeg, while mahleb and orange blossom perfume the dough with a subtle floral warmth. Finished with a generous dusting of icing sugar, Ka’ak el Eid are meant to be offered to guests, packed into tins, and enjoyed over many days, carrying the feeling of celebration well beyond the holiday itself. ✅Save to try ✅ Serves: makes 32-35 ka’ak Prep time: 1 hour (plus at least 12hrs resting) Cook time: 18-20 minutes INGREDIENTS ▪️1 kg fine semolina ▪️1 3/4 cups ghee, melted ▪️1 tbsp ground mahleb ▪️1/4 tsp instant yeast ▪️3 tbsp orange blossom water ▪️1 cup warm full-cream milk Filling ▪️500g date paste ▪️1 tsp ground cinnamon ▪️1/4 tsp ground nutmeg ▪️2 tbsp olive oil ▪️2 1/2 tbsp ghee, melted ▪️Icing sugar, sifted, for dusting METHOD 1️⃣Combine semolina, ghee and mahleb in a large bowl. Rub together with your hands until the mixture resembles damp sand. Cover and rest for at least 12 hours, or up to 2 days. 2️⃣For the filling, mix the date paste, cinnamon, nutmeg, olive oil and melted ghee until smooth. Chill briefly if too soft. 3️⃣Roll the filling into thin logs (about 8–9 mm thick) and set aside on a lightly greased tray. 4️⃣Loosen the rested dough with your hands. Add yeast and orange blossom water, then gradually work in warm milk to form a soft dough. Cover and rest for 1 hour. 5️⃣Preheat oven to 180°C and line trays with baking paper. 6️⃣Divide dough into golf ball–sized pieces. Roll each into a thin log (about 14–15 cm) and press a groove down the centre. 7️⃣Place a log of filling inside, pinch the dough closed to seal, then gently roll to smooth. Join the ends to form a ring and place seam-side down. 8️⃣Decorate the surface with a fork or tweezers to create the traditional pattern. 9️⃣Bake for 18–20 minutes until pale and just set.
