Epis Marinated Shrimp & Spaghetti for the win! If you’ve never cooked with epis before, this is your sign! Epis is a Haitian green seasoning made with herbs, garlic, peppers, and aromatics. We use it often to season our meats, rice etc. and it instantly upgrades and gives an added depth of flavor. I used it in this shrimp and spaghetti dish (very similar to traditional Haitian spaghetti) and it was perfect! Ingredients * 8–10 large prawns, peeled and deveined * 6 oz spaghetti * 4–5 cloves garlic, thinly sliced * 1/3 cup olive oil * 1/4 cup reserved pasta water * 1 tablespoon fresh parsley, finely chopped Shrimp + Sauce Marinade * 2 tablespoons epis * 1 tablespoon olive oil * Salt, black pepper, adobo, paprika, Old Bay, garlic powder, onion powder #shrimpasta #garlicshrimp #epis #haitianfood #pastarecipe

My Epis/ I love how passionate people get about food. Every time someone posts a recipe online, I love reading the comments of people from the same ethnic groups or country to see the heated debates about “authenticity” or “rightness”. No one is gonna cook like your mama folks 🤣. While there are staples when we are talking about a “authentic” I think it’s safe to say recipes vary between regions and households. This is my Epis recipe. Epis is the foundation of most savory dishes in Haiti. How we season our meats and and cook our rices, stews etc. Many Haitians will agree on the scallions, garlic, parsley and peppers. Everything else becomes a matter of taste I think. this recipe Is not the way my dad made it growing up because there are a lot of things that don’t serve me or I have come to realize in cooking doesn’t make sense for ME. Let’s break it down. I don’t use Bouillon cubes (in any food) nor any salt additives in my Epis Because I want to be able to use it for anything! If I’m making conch which is a dish that you shouldn’t add salt to until it’s fully cooked or it gets hard..I want to add my Epis to it and get those nice fresh flavors in there without the salt. I don’t add lime because if I’m using for rice why would I want my rice tasting like lime. I can add the lime juice directly to the meat I’m making. I don’t add scotch bonnet or cloves...again not every dish calls for that. This works for me cause pretty much most things I cook had these items. Oil not water to serve as a preservative and keep the ingredients as this is often kept in the fridge over time. I add onions cause I like it already in there if I’m making a nice fried fish the onions already in there. Some folks say onions make it watery. It’s fine with me. When I feel like it I add basil 🌿 Do you have a marinade mix you use to season and cook? What is it called? Or how do you make your Epis? It all depends on where you’re from. I like my epis smooth so it can double as a sauce. I know it’s not tradition but my Epis my choice. If you want it chunkier, use a food processor or a pestle and mortar instead of a blender. Epis seasons everything. Meats, seafood, rice, beans, vegetables.
