Ramadan Recipe 11- Filet-O-Fish at home Ingredients Fish 500g white fish fillets (pollock) Salt, to taste ½ tsp black pepper 120g plain flour 20g cornflour 180ml cold water 1/2 tsp garlic powder 1/2 tsp onion powder 1/2 tsp smoked paprika 1/2 tsp turmeric Breadcrumb Coating 120g panko breadcrumbs Tartare Sauce 200g mayonnaise 3 tbsp gherkins, finely chopped 2 tbsp white onion, finely diced 1 tbsp capers, minced 1 tbsp white vinegar 1/3 tsp granulated sugar 1/3 tsp dried parsley Salt - pinch To Serve 4 soft brioche or burger buns 4 slices cheese Method Mix all tartare sauce ingredients in a bowl. Taste and adjust seasoning. Set aside for at least 10 minutes (or refrigerate until needed). Score the fish without slicing through fully, fold till you get a square shape Pat dry with kitchen paper and season lightly with salt and pepper. In a bowl, mix flour, cornflour, seasonings and cold water to form a smooth batter Dip each fish piece into batter, coating fully. Transfer into breadcrumbs. Press crumbs firmly over all sides so they stick well. Heat oil in a large pan over medium heat Fry fish 3–4 minutes per side until deep golden and cooked through. Do not overcrowd pan - cook in batches if needed. Transfer to a rack or kitchen paper to drain. Steam the buns for around 30 seconds Layer the bun with cheese, fish, spoon over tartare sauce generously. CRISPY FISH BURGERS 🐟🍔 One of my favourite recipes from @sydneyfishmarket’s cookbook, A Fish for All Seasons. Crunchy golden fillets, creamy tartare, melty cheese, pickles and soft buns – what more could you want? The full recipe is in the book, but here’s what you’ll need 👇 Serves 4 Burgers - 800g pink ling fillets (cut into 10cm pieces) - 400ml buttermilk - Oil for shallow frying - 4 soft buns (milk, potato or brioche), toasted - 4 slices burger cheese - Burger pickles - ¼ iceberg lettuce, shredded Seasoned flour - ⅔ cup plain flour - ⅓ cup cornflour - 2 tsp baking powder - 2 tsp garlic powder - 2 tbsp sweet paprika - 1 tsp white pepper - 2 tsp dried oregano - ½ tsp cayenne - 2 tsp salt Tartare sauce - 1 cup mayo - 2 tbsp each chopped cornichon, capers, dill & parsley - Zest + 2 tsp lemon juice - Salt & pepper *Note: You can swap pink ling for coral trout, blue-eye trevalla or even barra. #FishBurger #CrispyFishBurger #PinkLing #SeafoodLovers #BurgerNight #TartareSauce #HomeCooking #ComfortFood #WeeknightDinner #AustralianSeafood

FILET-O-FISH 🐟🍞 I’ve got you sorted this Good Friday with one of the most underrated fast food classics. My homemade version is the real deal! - White fish fillets - Panko crumbs - Processed cheese slices Dredging batter - 1 egg - 1 tbsp mayonnaise - 1 tbsp dijon mustard - 1 tbsp plain flour - 1/2 tsp salt - Black pepper Tartar Sauce - 150g mayonnaise - 1 tsp dijon mustard - 1 tbsp chopped pickles - 1 tbsp chopped capers - 2 tbsp chopped dill - 2 tbsp chopped parsley - 1/2 tsp Worcestershire sauce - 1 tbsp lemon juice Fillet, skin and portion fish. Dredge the fish fillets in the batter then coat with panko crumbs, pressing firmly to stick. Transfer to an oven tray cover with a wire rack then bake at 180C for about 12-15 minutes until just cooked through. Top with cheese, and cook for a further minute to melt. Warm the brioche buns in the microwave for about 20 seconds then add a crumbed fillet, topping with tartar sauce to finish. #filetofish #fishburger #mcdonalds #maccas #wholeeggmayonnaise #tartarsauce #seafood #snapper #goldbandsnapper

Fish Burger Serves 2 Preparation time: 5 minutes Cooking time: 6-8 minutes Ingredients: 2 murray cod filets 2 eggs 80g panko crumbs 20g parmesan, grated 150ml grapeseed oil 2x Brioche buns, sliced in half ¼ Iceberg lettuce, finely sliced Tartare sauce: 100g Kewpie mayo 1 tbsp capers, roughly chopped 8 cornichons, diced 1 eschalot, peeled and finely diced ¼ bunch dill,picked & finely chopped ½ lemon, zest Method: In a small mixing bowl whisk the eggs, in another bowl add panko crumbs, parmesan, salt & pepper and mix well. Place the fish into the egg, coating it completely then move into the bread mix until fully crumbed. To make the tartare sauce, in a small mixing bowl add mayo, gherkins, capers, eschalots, dill & lemon zest and mix until all combined. In a medium fry pan add grapeseed oil and place on a medium heat and allow the oil to heat. Once hot add in the crumbed fish and the sliced buns cut side down in the oil to toast, remove from the pan and place onto a serving plate. Flip the fish and cook for another 3-4 minutes until cooked through and the crust is golden brown, remove from the pan and place onto a paper towel to drain off excess oil, season with salt. On the top side of the bun place a good amount of the tartare sauce and on the other add the sliced iceberg. Place the fish on top of the iceberg, add a squeeze of lemon juice, close the bun and serve.

Iv’e only gone and done it: Smashed Fillet O Fish Tacos 🌮💡 I know fish tacos are nothing new, but I bet you’ve never seen them done like this… Perfect for a fun Fakeaway dinner at home and they taste way better using fresh fish and a zippy zingy homemade tartare sauce 🙌🏼 Recipe: makes 4 200g skinless, boneless snapper, diced 1 heaped teaspoon American mustard 1/2 teaspoon garlic powder 1/2 teaspoon dried oregano 1 small egg Sea salt and white pepper to taste 4 tortillas 4 slices burger cheese 2 cups lettuce, shredded Tartare sauce: 1/2 cup mayonnaise 1 tablespoon capers, chopped 1 tablespoon pickles, diced 1 tablespoon American mustard 1 tablespoon dill, chopped, plus extra to serve Zest and juice of 1/4 of a lemon Sea salt and pepper to taste Mix all the tartare ingredients in a bowl. Place the fish into a small food processor along with the mustard, garlic powder, dried oregano, salt, pepper and the egg. Blitz until the mixture is combined. Spread the fish mixture in an even layer on the tortillas then sprinkle with panko crumbs-Press down lightly so they stick. Heat a little oil in a frying pan over a medium heat then cook the tortillas, fish side down for 3 minutes or until crispy and brown. Turn over then add on the cheese and cook for a further 2 minutes, or until the fish is cooked and cheese is melted.
