This is such a good one for meal prep and batch cooking! The chilli and rice will last in the fridge for a few days or freezer for a couple of months.

Ingredients (2)👇
1 white onion
120g mushrooms
2 garlic cloves
200g extra lean beef mince @musclefooduk JADE5
400g chopped tomatoes with herbs
1 beef oxo cube (100ml)
1tbsp tomato puree
3tsp ground cumin
1tsp chilli powder (adjust to spice preference)
Handful of cherry tomatoes
Rocket
50g feta cheese
20g lightly salted tortilla chips
250g cooked plain rice
30g guacamole
2tbsp sour cream
Salt & pepper
Fry diced onion and sliced mushrooms in a pan, cover with a pan lid for a few minutes before adding the chopped garlic.
Add the beef mince, season with salt, pepper, and cook until brown.
Add tomato puree, tinned tomatoes, beef stock, and season with cumin, chilli powder, salt and pepper.
Leave to simmer for 10 minutes or so.
Create a salad with the cherry tomatoes, rocket and feta.
Serve with the cooked rice, tortilla chips, chilli, feta salad, and top with a blob of guac & sourcream.
